Moist and hearty southern style vegan cornbread recipe. Made with nutritious spelt flour. Perfect to serve with winter soup or chilli!

1 cup spelt flour
1 cup cornmeal flour
1/4 cup organic cane sugar
1/2 teaspoon sea salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 cup plant based milk ((unsweetened and unflavored) )
1/3 cup canola oil
1/4 cup melted vegan butter
1 teaspoon apple cider vinegar

Steps:

  • Preheat your oven to 350 F.
  • In a large bowl, combined 1 cup of flour, 1 cup of cornmeal, 1/4 cup of sugar, 1/2 teaspoon of salt, 1 teaspoon of baking powder, and 1/4 teaspoon of baking soda. Stiff together lightly until combined.
  • In a separate large bowl, mix together 1 cup of plant based milk of choice, 1/3 cup of canola oil, 1/4 cup of melted vegan butter, and 1 teaspoon of apple cider vinegar. Mix together till combined
  • Add your wet ingredients to your dry ingredients and mix until combined. DO NOT OVER MIX OUR BATTER.
  • Pour batter into a 9x9 inch baking pan and bake for 20-25 minutes. You know it is done once you stick a toothpick into it and it comes out clean. (see photo above)
  • Allow to cool before cutting. Serve with your favorite soup and chili. Will store in refrigerator for 5 to 7 days and in the freezer for 2 to 3 months.

3 tablespoons chia seeds
1 ½ cups warm water
½ cup sucanat
¼ cup agave nectar
1 ½ cups cornmeal
1 cup spelt flour
2 teaspoons baking powder
1 teaspoon salt
1 ½ cups frozen corn kernels

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a loaf pan.
  • Soak chia seeds in warm water in a bowl for 5 minutes; drain.
  • Blend chia seeds in a blender until smooth; add sucanat and agave nectar. Blend the mixture again until smooth.
  • Sift cornmeal, spelt flour, baking powder, and salt into a large mixing bowl. Add frozen corn kernels and chia seed mixture to the cornmeal mixture; stir and pour into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

1 cup spelt flour (I use white)
5 teaspoons baking powder
1/4 teaspoon sea salt
2 tablespoons safflower oil (or sunflower oil)
1 1/4 cups water
1 tablespoon maple syrup

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 2 quart casserole dish.
  • Mix wet and dry ingredients separately, then combine until just mixed.
  • Pour into casserole dish, and bake approximately 22 minutes.
  • Best served hot out of the oven!

1/2 cup water

Steps:

  • Mix dry ingredients in a bowl.
  • Mix wet ingredients in another bowl.
  • Add wet to dry and stir well.
  • Bake at 375° for about 30 minutes, or until golden brown.
