VEGAN CREAM OF CHICKEN SUBSTITUTE

Yields the equivalent of one can of condensed cream of chicken soup!

3 tablespoons vegan butter
1 tablespoon all-purpose flour
1/2 cup mild-flavored plant milk (such as oat or unsweetened almond)
1/2 cup vegan chicken-style broth (Better Than Bouillon's No-Chicken Base works great)
sea salt (to taste)
ground black pepper (to taste)

Steps:

  • To a small saucepan over medium heat, add the butter.
  • When butter is melted, add flour; whisk until smooth.
  • Add milk, broth, salt, and pepper.
  • Bring to a boil and continue whisking for 2 minutes, until thickened.
  • Use anywhere a recipe calls for a can of cream of chicken soup!

  • Add all the ingredients to a medium sauce pan and stir. Turn the heat to high, cover the pot, and bring the mixture to a boil. When the mixture begins boiling, turn the heat to low and let simmer (covered) for about 10 minutes.
