VEGAN CREAMY COCONUT BLACK RICE PUDDING



Vegan Creamy Coconut Black Rice Pudding image

Sticky, nutty, and chewy black rice is simmered in a spice-kissed coconut milk broth until tender. Sweet raisins are stirred in to add chewy bits of texture, and the dish is finished with juicy pomegranate seeds for a fresh pop of flavor.

1 cup uncooked short-grain black rice, cooked according to package instructions (do not season)*
3/4 cup full-fat canned coconut milk, scooped from the top of a can that has been chilled overnight
1/2 cup filtered water
3 to 4 tablespoons pure maple syrup, to taste
1 tablespoon coconut oil
2 teaspoons pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon freshly-ground nutmeg
Pinch of fine-grain sea salt
1/2 cup raisins ((optional))
1/2 cup pomegranate seeds//arils

Steps:

  • In a medium saucepan, whisk together the coconut milk, filtered water, maple syrup, coconut oil, cinnamon, nutmeg, and sea salt over medium-high heat until combined. Add the cooked black rice, and use a large wooden spoon to stir. Bring to a boil, reduce heat, and simmer, uncovered, for 10 minutes or until the about half of the liquid has been absorbed and the pudding is thick and creamy, stirring occasionally. Add the raisins (if using), and simmer another 3 minutes to soften.
  • Divide between 4 serving bowls or glasses and garnish with the pomegranate seeds. Serve warm or chilled.

1 ½ cups water
1 cup uncooked brown rice
1 (14 ounce) can coconut milk
½ cup vanilla soy milk
¼ cup golden raisins
3 tablespoons agave nectar, or more to taste
1 tablespoon buttery spread (such as Smart Balance®)
2 whole star anise pods
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ cup sliced almonds

Steps:

  • Bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
  • Combine cooked rice, coconut milk, soy milk, raisins, agave nectar, margarine, star anise, vanilla extract, and cinnamon in a pot. Bring to a boil over medium heat and reduce to a simmer. Cover and cook for 10 minutes. Remove from heat and allow to set until liquid is absorbed, about 10 minutes. Remove star anise and garnish with almonds.
