QUICK VEGAN QUESADILLAS



Quick Vegan Quesadillas image

From the Compassion Over Killing website. I plan on modifying this recipe in the future, but this was my first attempt!

1 (15 ounce) can garbanzo beans (chick peas)
1/2 cup water-packed roasted red pepper
4 tablespoons lemon juice
3 tablespoons tahini
5 garlic cloves, peeled
1/4 teaspoon cumin
8 whole wheat tortillas
1/2 cup chopped onion
1 cup salsa

Steps:

  • Drain the beans and place in a food processor or blender with the next five ingredients.
  • Process until very smooth, 1 to 2 minutes.
  • Spread a tortilla with 2 to 3 tablespoons of the garbanzo mixture and place in a nonstick skillet over medium heat.
  • Sprinkle with chopped onions and salsa.
  • Top with a second tortilla and cook until the bottom tortilla is warm and soft, 2 to 3 minutes.
  • Flip and cook the second side for 1 minute. Remove from the pan and cut in half.
  • Repeat with the remaining tortillas.

A very simple, versatile quesadilla using corn tortillas. Add anything you'd like such as spinach, onion, or bell peppers. You can also top with vegan, dairy-free, sour cream and salsa.

6 corn tortillas
1 (8 ounce) package cheese (Daiya cheese works best)
1 stick Earth Balance natural buttery spread
1 dash salt (optional)

Steps:

  • Heat skillet, medium setting.
  • Spread butter onto both sides of each corn tortilla.
  • Place one corn tortilla onto skillet.
  • Add 1/4 cup cheese, or less if desired.
  • Place another tortilla on top.
  • Heat through until tortilla underneath is lightly browned.
  • Flip and brown the other side.
  • Remove from heat.
  • Sprinkle with salt if desired.
  • Repeat steps.

  • Prepare your black bean and corn mix. Add the chopped onion and crushed garlic to a frying pan with the olive oil. Add the cayenne pepper and cumin and sauté until the onions are softened. Add in the black beans and corn and sauté until warmed and well mixed with the spices. Add in sea salt and black pepper to taste. Set aside.
  • Prepare your guacamole. Mash the avocados, squeeze in the lime juice and add sea salt and black pepper to taste. Set side.
  • Heat up a frying pan (dry, no oil) and then add 1 tortilla to the pan. Let it toast a little on one side until very slightly browned, and then flip it. Add some black bean and corn mix to one side of the tortilla, topped with some guacamole and then some vegan cheese. Fold the tortilla over to close it. Pat down with your spatula so that the top sticks. Cook for a couple of minutes before flipping and cooking for a couple of minutes on the other side so that both sides are nicely browned and toasted.
