A vegan version of my mom's favorite holiday breakfast.

2 cups rolled oats
1 ½ (14 ounce) cans coconut milk, or more to taste
3 tablespoons chia seeds
2 Granny Smith apples, peeled and grated
½ lemon, juiced
2 cups sliced strawberries
1 cup blueberries
2 tablespoons maple syrup, or to taste

Steps:

  • Mix oats, coconut milk, and chia seeds together in a bowl.
  • Toss apples and lemon juice together in a bowl until coated; fold into oat mixture. Stir strawberries, blueberries, and maple syrup into oat mixture. Refrigerate for 8 hours to overnight.

Make a batch of muesli that uses popcorn as a crunchy base. Enjoy with bio yoghurt for a healthy start to the day. It will store in a jar for up to five days

100g porridge oats
2 tbsp toasted three-seed mix (ours included flaxseed and pumpkin and sunflower seeds)
40g plain or lightly salted popcorn
30g sultanas
6 walnut halves, broken up
4 x 120g pots bio yogurt
milk, to serve (optional)

Steps:

  • Combine the oats, seed mix, popcorn, sultanas and walnuts. Will keep in a sealed jar or airtight container for up to five days.
  • When you're ready to serve, spoon the yogurt into bowls, then scatter over the muesli and pour over a little milk to loosen, if you like.

  • All you need to do is mix the almond, apricots, and all of the remaining elements in a large bowl. Then move the mixture to a large, airtight container for storage.
  • You can toast some or all of the elements within the blend. I prefer to only toast the nuts, seeds, and grains though. To do this, spread them in a single layer over a large baking tray and toast in the oven for 10-15 minutes at 325ºF/160ºC, until lightly golden and aromatic.Nuts can take less time - 7-8 minutes, though I just chuck everything in together to save time and it always works well. Once toasted, allow to cool and then mix with the remaining ingredients.
  • Homemade muesli cereal should be stored in an airtight container at room temperature, for between 1-2 months. There’s no need to refrigerate the mixture unless you plan to blend/chop the nuts and seeds (this may also reduce the shelf life).If you decide to make a meal-prep batch of overnight oats style muesli, then these will last in the fridge for 5-6 days.
