These are so yummy, you'd never guess they were vegan!

⅔ cup maple syrup
¼ cup vegetable oil
5 tablespoons unsweetened cocoa powder
1 teaspoon ground cinnamon
½ cup peanut butter
1 cup rolled oats
1 teaspoon vanilla extract

Steps:

  • In a saucepan over medium heat combine the maple syrup, oil, cocoa and cinnamon. Boil for three minutes, stirring constantly. Remove from heat and stir in the peanut butter, rolled oats and vanilla until well blended. Drop by heaping spoonfuls onto waxed paper and chill to set, about 30 minutes.

Chocolatey and peanut buttery! Just like how mom used to make them, except without all the saturated fat from the butter! Vegan and kid friendly.

1/2 cup Peanut Butter
3/4 cup sugar
1/4 cup non-dairy milk
2 tbsp cocoa powder
1 tsp vanilla ((optional))
1 pinch salt ((optional))
1 1/2 cups Old Fashioned Oats

Steps:

  • Melt the sugar, peanut butter, non-dairy milk, and cocoa powder in a pot on medium heat on the stove
  • Once mixture is creamy, add in salt, vanilla, and oats
  • Scoop out about 1 tbsp of mixture at a time and place on parchment paper lined cookie sheet til all of mixture is on the parchment paper
  • Place in freezer for at least 2 hours to firm and enjoy!

These delicious no-bake dairy-free vegan chocolate oatmeal cookies are healthier than traditional no-bake cookies that use butter or margarine.

2 cups rolled oats
1 cup dates (packed, finely chopped, fresh)
1/4 cup cashews (finely ground or almonds)
1/4 cup soymilk powder
1 tablespoon cocoa powder
1 cup dairy-free dark chocolate chips
1 tablespoon maple syrup

Steps:

  • Gather the ingredients.
  • Place a large baking sheet lined with parchment in the freezer for 15 minutes.
  • Meanwhile, combine the oats, dates, ground cashews, soymilk powder and cocoa powder in a small mixing bowl. Set aside.
  • In a double-boiler or a stainless-steel mixing bowl set over (but not touching) several inches of boiling water, melt the chocolate chips until completely melted.
  • Remove from heat and stir in the maple syrup.
  • Using a wooden spoon, mix the oat mixture into the melted chocolate , stirring until well combined.
  • Remove the baking sheet from the freezer and, using a small ice cream scoop or melon baller, drop the mixture onto the parchment, about two tablespoons at a time, until all of the mixture is used.
  • Place the sheet in the refrigerator until cookies are set, about one to two hours.
  • Serve cold or at room temperature. Enjoy!
