2 Tbs. Oyster Sauce
1 Tbs. Asian chili-garlic sauce
1 tbs. reduced sodium soy sauce
1/2 tsp. sugar
10 oz. dried wide rice noodles
2 Tbs. vegetable oil
1 garlic clove, finely chopped
1 8-oz skinless, boneless chicken breast, cut into 3/4 inch pieces
1 red bell pepper, cut into 1 inch pieces
1 small onion, cut into 1 inch pieces
1/2 cup cherry tomatoes, halved
1 large egg beaten to blend
1/2 cup fresh basil leaves, preferably Thai

Steps:

  • Stir oyster sauce, chili garlic sauce, soy sauce and sugar in a small bowl to combine; set sauce aside. Cook noodles according to package directions. Drain, run under cold water to cool, and set aside Heat oil in a large wok or skillet over medium-high heat; add garlic and cook stirring often until golden brown, about 1 minute. Add chicken and cook, tossing often, ntil cooked through, 3-4 minutes. Add pepper, onion, tomatoes and 2 Tbs. reserved sauce to pan and toss to combine. Add noodles, egg, and remaining 2Tbs. sauce and toss to combine. Add basil leaves and cook, tossing constantly, until noodles and vegetables are completely coated and sauce is heated through, about 2 minutes more.

Number Of Ingredients 15

10 ounces rice noodles, cooked
1 tablespoon toasted sesame oil, for noodles
1 pound chicken breasts, sliced thin
1 red bell pepper, chopped
3-4 bird chili peppers, minced with seeds
1 small sweet onion, diced
2 cloves garlic, minced
1 cup cherry tomatoes, quartered
2 large eggs, beaten
2 tablespoons vegetable oil
1/2 cup fresh basil, minced (garnish)
2 tablespoons hoisin sauce
1 tablespoon chili garlic sauce
1 tablespoon soy sauce
1/2 teaspoon sugar

Steps:

  • 1) For sauce, stir ingredients together in a small bowl and set aside for alter.
  • 2) Prepare all your other ingredients before you start cooking: Dice chicken and veg. Mince the chili peppers and garlic very fine.
  • 3) Cook rice noodles according to package instructions. Once cooked, drain, rinse with cold water, and toss with sesame oil to prevent sticking. Set aside.
  • 4) Heat a large wok over medium-high heat. Once hot, add the oil and chicken and cook until the chicken is just cooked through, about 4-5 minutes.
  • 5) Add onions and garlic and continue to cook. Be careful not to burn the garlic.
  • 6) Add peppers and half of the sauce and cook for 30 seconds.
  • 7) Add noodles and rest of sauce and toss to combine.
  • 8) Make a well in the middle of the noodles and add beaten eggs. Let cook for 30 seconds so eggs can firm up a bit. Then stir together.
  • 9) Serve noodles immediately garnished with fresh basil.

  • Add 1/2 stick of butter, melt completely.
  • Add noodles and toss with salt and pepper to taste.

  • Drain noodles, reserving 1/4 cup of cooking liquid.
  • Return noodles to pot.
  • You may moisten the noodles with reserved water if desired.
  • Toss with remaining ingredients and serve.

3/4 pound medium-size noodles
Salt and freshly ground pepper to taste
1 tablespoon olive oil
1 green pepper, cored and deveined, cut into 1 1/4-inch cubes
1 tablespoon butter
4 tablespoons grated Parmesan

Steps:

  • Cook the noodles in boiling salted water until tender. Do not overcook. Drain and reserve 1/4 cup cooking liquid.
  • Meanwhile, in a small skillet, add the olive oil and the green pepper. Salt and pepper to taste. Cook briefly until tender. Set aside.
  • Return the noodles to the pan; add the reserved liquid, green pepper and the butter. Salt and pepper to taste; add Parmesan. Toss well and serve immediately.
