2 1/2 cups unsweetened almond milk
4 tablespoons unsweetened cocoa powder or cacao powder
2 tablespoons natural peanut butter
2 pinches salt
4 tablespoons maple syrup (or honey if not vegan)
1/4 teaspoon pure vanilla extract
1 tablespoon peanut butter
2-3 tablespoons maple syrup
vegan marshmallows
coconut cream
chocolate shavings
cacao nibs
chopped peanuts

Steps:

  • In a small saucepan over low heat, add almond milk. After giving the almond milk a few minutes to warm, whisk in cocoa or cacao powder, peanut butter, and salt.
  • When large clumps have dissolved, whisk in maple syrup and vanilla extract. Whisk periodically until mixture is smooth and desired temperature is achieved. If you find you prefer it sweeter, add more maple syrup as desired.
  • Remove from heat and pour into mugs. Top with marshmallows and peanut butter drizzle or other toppings if desired.
  • To make peanut butter drizzle: Combine peanut butter and maple syrup. Adding a little maple syrup at a time until desired consistency is reached.

2 cups almond milk (I used unsweetened)
1/4 cup creamy peanut butter
1/2 cup vegan dark chocolate chips (I used Guittard extra dark chocolate chips)
1 tbsp pure maple syrup (add more if you like it sweeter)
1 tbsp melted vegan chocolate chips (optional for topping)
1 tbsp melted peanut butter (optional for topping)
2 tbsp vegan marshmallows (optional for topping (I like Dandies vegan marshmallows))

Steps:

  • In a small saucepan, add almond milk. Heat over medium heat until milk is warm. You don't want the milk to come to a boil, though.
  • Add the peanut butter and vegan chocolate chips. Whisk until melted and combined.
  • Taste and add pure maple syrup to suit your taste. If you're using a semi-sweet chocolate you may not need it, if you're using a very dark chocolate you may need the full two tablespoons.
  • Top with melted peanut butter, chocolate and marshmallows if desired.

1 tablespoon agave syrup
1 tablespoon cocoa powder
splash vanilla extract
1 tablespoon peanut butter
1 tablespoon peanut butter
1/4 cup vegan mini marshmallows (such as Dandies)

Steps:

  • In a small saucepan over low heat, heat the milk until scalding but not boiling.
  • Add in the chopped chocolate, agave, cocoa powder, and vanilla extract. Stir until chocolate melts fully. Remove from heat and stir in peanut butter.
  • Microwave 1 tablespoon of peanut butter for 15-20 seconds in a small bowl, then drizzle up and down the sides of a mug. Pour in hot cocoa, then top with marshmallows. Torch marshmallows using a small torch or by heating under broiler for 30 seconds!
