VEGAN PULLED JACKFRUIT RECIPE BY TASTY
Here's what you need: young green jackfruit, olive oil, yellow onion, garlic, chili powder, paprika, cumin, liquid smoke, salt, pepper, vegetable stock, vegan bbq sauce, red onion, tomato, lettuce, burger bun

Steps:
- Preheat your oven to 400ºF (200ºC).
- Drain and rinse the jackfruit, then cut the jackfruit into smaller pieces, removing the core.
- Add the olive oil, onions, garlic, salt, and pepper to a large frying pan or skillet over medium-high heat. Sauté until the onions are tender and become translucent.
- Add the jackfruit, chili powder, paprika, cumin, liquid smoke, salt, pepper, and liquid smoke, and stir.
- Add the vegetable stock, cover, and cook another 10-15 minutes, until the jackfruit is soft enough that it can be mashed.
- Mash the jackfruit with potato masher or a couple of forks, until it looks pulled or shredded.
- Spread an even layer of pulled jackfruit across a parchment paper-lined baking sheet.
- Bake for 25 minutes.
- Remove from oven and pour over the vegan BBQ sauce and stir to combine.
- Place back in the oven for 10 more minutes.
- Build your burger, top with dressings of your choice.
- Enjoy!

VEGAN PULLED JACKFRUIT
Use jackfruit to make this clever vegan 'pulled' meat substitute, perfect for stuffing into bread rolls and enjoying with all the barbecue trimmings

Steps:
- Heat the oil in a frying pan and cook the onion until very soft, for around 10-12 mins. Add the cinnamon, cumin and paprika to the onions and cook for a further 2-3 mins. Next add the Tabasco, vinegar and bbq sauce and mix well before adding in the tomato, the drained jackfruit and 200ml water. Leave to simmer gently, covered, for 30 mins stirring every 5-10 mins to help break down the jackfruit, then take the lid off and cook a further 10 minutes.
- Once cooked, use a fork to make sure all of the jackfruit is well shredded. Check seasoning and add another tbsp of bbq sauce if necessary for extra stickiness.

- In a flat sauce pan, roast the cumin seeds and coriander seeds for a few minutes until they are fragrant and toasted but not burnt. Then crush them together in a mortar and pestle.
- In medium sauce pan, heat olive oil. Then add in the cleaned and shredded young jackfruit, the crushed toasted cumin & coriander seeds. Next add in the can of tomatoes along with smoked paprika, Worcester sauce, wholegrain mustard , apple cider vinegar, black pepper, brown sugar and salt.
- Let the spiced tomato sauce simmer for a bit (about 8-10 minutes) until the sauce thickens and is no longer watery.
- Continue cooking and stirring the jackfruit in the thickening sauce for about 5 minutes until the sauce is well coated and absorbed in the jackfruit. At this stage the burgers are ready to assemble.
