RASPBERRY VEGAN ICE CREAM RECIPE

Raspberry Vegan Ice Cream will satisfy all your frozen treat cravings without sugar, dairy, or additives.

Number Of Ingredients 4

6 ounces fresh raspberries
1 14-ounce can full fat coconut milk (or coconut cream)
3 tablespoons real maple syrup
1 teaspoon vanilla extract

Steps:

  • Puree the raspberries in a small food processor. Push the puree through a strainer leaving just the seeds behind.
  • Whisk the raspberry puree into the coconut milk, and add the maple syrup and vanilla.
  • Process the mixture in your ice cream machine according to its directions.
  • Eat the ice cream immediately or put it into a container and freeze until firm. It is best eaten the same day. If it gets to hard in the freezer leave it out on the counter for a few minutes to soften.
  • Makes one pint

A wicked combination of avocadoes, bananas and raspberries make this vegan raspberry ice cream an all natural treat.

3 bananas (medium-sized, peeled, chopped and frozen)
1 avocado (ripe)
250 g raspberries (frozen )

Steps:

  • Blend the bananas,avocado, the molasses of your choice and raspberries in a food processor until the mixture is well combined.
  • Pour the mixture into a container, cover and freeze. ( I used a little enamel pot that came with a lid).
  • At this stage you could churn the mixture in an ice cream maker and let the magic happen that way. I opted to freeze the ice cream and then scrape the edges with a fork and mix it again. I did this every half hour for two hours.
  • Freeze for a minimum of six hours and let it come to room temperature (about 15 mins) before scooping it up and serving.

2 cups fresh raspberries or 2 cups frozen raspberries
3/4 cup sugar
1 tablespoon water
2 cups soy coffee creamer

Steps:

  • Comebine raspberries, sugar and water in saucepan.
  • Bring to a boil stirring constantly.
  • As soon as mixture starts to boil, reduce heat to a simmer and simmer for about 5 minutes stirring occasionally.
  • Remove pan from heat and let mixture cool a little. You will want to strain the mixture through cheesecloth or a sieve to remove the seeds.
  • Stir in the cream.
  • Refrigerate mixture overnight and freeze according to ice cream makers instructions.

  • Place the coconut milk, sugar, and vanilla in a blender. Blend until combined, about 30 seconds.
  • Freeze using an ice cream maker, according to manufacture's instructions. During the last few minutes of churning, add in the raspberries. You can serve immediately for a soft serve texture or you can place the ice cream in a container and freeze for a firmer texture.
  • Note-I place the cans of coconut milk in the fridge the night before or a few hours before I make the ice cream. If you don't have chilled coconut milk, you can always place the ice cream mixture in the fridge for 30 minutes before churning up the ice cream. I like Thai coconut milk, you can find it in the Asian aisle at most grocery stores.
