Here's a great looking and great tasting appetizer. It's easy, too! You can substitute any flavor of cheese spread for garlic herb.

2 (8 ounce) packages refrigerated crescent rolls
1 (7 ounce) package garlic herb cheese spread
1 (10 ounce) package frozen chopped spinach, thawed and drained

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Split crescent dough in half along center perforation. Flatten one rectangle, sealing perforations. Spread with 1/4 of the cheese spread and sprinkle with spinach. Starting with long side, roll dough up, rolling back and forth several times to seal edges. Cut into 3/4 inch slices (about 15 slices per roll). Arrange the slices one inch apart on ungreased cookie sheet. Continue making the crescent roll ups until all of the ingredients are used.
  • Bake for 10 to 12 minutes, until lightly browned. Serve immediately or keep warm on a warming tray.

Here's how you can make some delicious vegan spinach pinwheels with Mediterranean flavors! Check out the step by step recipe below.

1 vegan puff pastry sheet
300g (2 cups) spinach, frozen
150g (¾ cup) tofu, crumbled
1 spring onion, chopped
2 Tbsps fresh dill, chopped
1 Tbsp fresh mint, chopped
1 leek, chopped
1 garlic clove, minced
1 Tbsp olive oil
salt and pepper, to taste

Steps:

  • Heat a skillet on medium heat. Add olive oil. When hot, add chopped leek and minced garlic. Cook for about 2 minutes, stirring occasionally.
  • Add spinach and cook until soft, for about 7 minutes. Remove from heat and let it cool.
  • Add dill, mint, spring onion, salt, and pepper to taste. Mix the spinach herb mixture to incorporate.
  • Drain any excess liquid, if necessary.
  • On a dry clean surface, lay out your puff pastry sheet.
  • Spread the spinach mixture on the rolled puff pastry, evenly.
  • Top with crumbled tofu.
  • Roll the puff pastry to make a roll.
  • Slice the puff pastry roll with a sharp knife starting with the middle and moving to the ends of the roll. You will get about 16 disks, 1-2cm in width each.
  • Place each sliced disk on a parchment paper-lined baking sheet and bake them at 200C for about 30 minutes or until golden. You may need to make these in two different batches. Make sure they don't stick to each other on the baking sheet.
  • Serve with your favorite sauce.

These Mexican pinwheels make a delicious and colorful lunch! They're vegan, super easy to make, and filled with fresh vegetables and beans. Dip them in salsa or guacamole for even more flavor!

4 tortillas
1/2 green bell pepper
1/2 red bell pepper
1/2 yellow bell pepper
1 cup black beans
2 cups baby spinach
1 cup vegan cream cheese or vegan sour cream
1/2 cup vegan shredded cheese
1 cup veggie ground meat
1 teaspoon cumin
1 teaspoon paprika powder
1/4 teaspoon chili powder

Steps:

  • Thinly slice the bell peppers.
  • Put each tortilla wrap on a plate or large cutting board. Spread a thin layer of either vegan cream cheese or sour cream on top of each tortilla. Combine the spices in a small bowl. Sprinkle each tortilla with the spices.
  • Heat the veggie ground meat in a pan on the stovetop. Season it with Mexican spices if necessary (most brands are already seasoned and you don't have to do much).
  • Then place a line of baby spinach on top. Next a line of black beans, veggie ground meat, bell peppers, and vegan cheese. Then put a bit of the salsa on top.
  • Tightly roll up the tortilla. Slice off the ends and and then cut the remaining tortilla into 6-8 pieces depending on the size of your tortilla. Serve them with salsa or enjoy them on their own!

These Vegan Pinwheels are the ultimate party food appetizers! Loaded with a mock 'chicken bacon' cheese-y creamy ranch filling, veggies, seeds. These easy tortilla roll-ups will become your new favourite appetizer recipe. Quick & easy to make, easy to transport. Perfect for picnics, parties, game days and holidays! Serve cold.

1/3 cup of my 5 Minute Vegan Ranch dressing (LINK HERE)*
1/3 cup vegan cream cheese, I used Daiya for this recipe
227 grams vegan chicken pieces, chopped small, I used Tofurky lightly seasoned plant based chick'n*
1 (227 g) can of water chestnuts, drained, rinsed and chopped small
1/4 cup red onion, diced
1/4 cup red pepper, diced
1 celery stalk, diced
1/3 cup imitation bacon bits, or your favourite vegan bacon bits
3 large burrito size flour tortillas (use gluten free tortillas if needed)
1/3 cup or so sunflower seeds, I buy mine roasted and salted
1/3 cup or so dried cranberries, chopped (optional but tasty)

Steps:

  • First make my 5 minute vegan ranch dressing and chill until needed.
  • Prep all your veggies and vegan chicken. Chop them small. Add to a large mixing bowl along with the ranch dressing and cream cheese. Mix well. Taste for seasonings add salt and pepper if needed.
  • Spread an even layer of the filling on a flour tortilla. Sprinkle with some sunflower seeds and dried cranberries. Roll up TIGHTLY! (A little will spill out the sides that's normal) Repeat with remaining 2 tortillas.
  • Cover with plastic wrap and chill the unsliced rolls in fridge for 1 hour up to 5 hours. Slice into one inch or so pinwheels using a serrated knife. Enjoy! Makes approximately 24-30 pieces, 8-10 per log.
  • You can serve these vegan appies as is or leave out the cranberries and enjoy with a side of salsa! Either way it's a win win! Lovely for your kids lunch box, next picnic, super bowl party or your holiday Christmas platter!

  • Add spinach to a bowl. Pour boiling water and let sit for 3 minutes, then drain and use. If using frozen, thaw squeeze excess moisture and use.
  • Add the drained spinach to a bowl. Add cream cheese* (see note to make your own), herbs and spices. Mix well, taste and adjust flavor.

  • If the tortillas are not soft and pliable, warm them up on a pan on the stove until soft or in the microwave with a damp towel on top for about 30 seconds.
  • Grab one of the tortillas and spread 1/4 cup of refried beans over half of it. Next, spread on 2 tablespoons of cream cheese over about 1/4 of the remaining tortilla and then fill the last bit of the tortilla up with guacamole. Sprinkle in 2 tablespoons each of pico de gallo and corn plus about 1/4 cup spinach.
  • Roll the tortilla up tightly and wrap tightly in either plastic wrap or parchment paper. If using parchment paper, twist the ends in to make sure it stays tight. Continue with the remaining ingredient and tortillas.
  • Place the rolled pinwheels into the refrigerator for about 2 hours or overnight. This is key as it will help it retain its shape.
