This vegan tuna sandwich with chickpeas is ready in no time and it's so incredibly yummy! And with the help of dried seaweed it tastes so much like the real thing!

1 can chickpeas
1 tablespoon dried Wakame seaweed
2 tablespoons vegan mayonnaise
1 teaspoon soy sauce
1 teaspoon lemon juice
2 teaspoons fresh or frozen dill
2 stalks of celery, chopped into small pieces
salt, to taste
black pepper, to taste
4 slices of whole wheat bread
1 tomato, cut into thin slices
1/4 cucumber, cut into thin slices
lettuce
1/2 red onion, cut into rings

Steps:

  • Crumble the dried seaweed with your hands and let it soak in a shallow bowl of water for about 5 minutes (1/2 cup of water should be fine). Drain and press the water out with your hands.
  • Mash the chickpeas with a fork until they have a flaky texture. Stir in the celery, mayonnaise, dill, seaweed, lemon juice, and soy sauce. Season with salt and pepper.
  • Serve on whole wheat bread together with lettuce, tomatoes, cucumber, and red onions.

1 (15-ounce) can chickpeas, rinsed and drained
3 tablespoons tahini
1 teaspoon Dijon or spicy brown mustard
1 tablespoon maple syrup or agave nectar
¼ cup diced red onion
¼ cup diced celery
¼ cup diced pickle
1 teaspoon capers, drained and loosely chopped
Healthy pinch each sea salt and black pepper
1 tablespoon roasted unsalted sunflower seeds (optional)
8 slices whole-wheat bread
Dijon or spicy brown mustard
Romaine lettuce
Tomato, sliced
Red onion, sliced

Steps:

  • Place the chickpeas in a mixing bowl and mash with a fork, leaving only a few beans whole.
  • Add tahini, mustard, maple syrup, red onion, celery, pickle, capers, salt and pepper, and sunflower seeds (if using) to mixing bowl. Mix to incorporate. Taste and adjust seasonings as needed.
  • Toast bread if desired, and prepare any other desired sandwich toppings (such as lettuce, tomato, and onion).
  • Scoop a healthy amount of the chickpea mixture (about ½ cup) onto one slice of bread, add desired toppings and top with second slice of bread. Repeat for additional sandwiches.

1 tbsp Nutritional Yeast
.25 cup Vegan Mayo
.5 tbsp Dijon Mustard
1 tbsp Lemon Juice
.5 tsp Salt
.5 tsp Garlic Powder
.5 tsp Onion Powder
.25 cup Diced Onion
.25 cup Spring Onion
1 sheet Nori Sheet

Steps:

  • 1. Drain Chickpeas and add them to a mixing bowl and start mashing with a fork or masher.
  • 2. Add in other ingredients and mash.
  • 3. This process can take a few minutes. If you want it thicker, you can leave it half-mashed so that the chickpeas are somewhat intact. Or if you want more of a tuna consistency, mash until you get a smoother texture.
  • 4. Once you're happy with your desired vegan "Tuna" simply serve it on sourdough bread, in a sandwich, or in a salad.

1/4 cup celery (about 2 small stalks, leaves ok too), chopped
1/4 cup red onion (about 1/2 small), chopped
1/4 - 1/2 teaspoon garlic powder
himalayan salt & cracked pepper, to taste
dash of cayenne, optional
crushed nori sheets or dulse (seaweed)
1 tablespoon chia seeds or hemp hearts for some omega 3 & 6
sweet or dill pickle relish
6 slices whole grain, sprouted whole grain flourless or artisan bread, to serve

  • Serve on bread of choice, along with some leafy greens and the optional 1/4 sheet of nori.

This plant protein rich vegan 'tuna' sandwich made with chickpeas is THE ultimate sandwich for everyone, whether you're vegan or an avid fish lover. Chunky chickpea filling combined with crunchy cucumbers, crispy lettuce, and creamy avocado makes it a perfect marriage of textures and flavours.

400 g tin chickpeas (rinsed and drained)
2 tbsp capers
1 tsp Dijon mustard
3 tbsp vegan mayonnaise (I used Hellmans)
2 nori sheets (finely chopped)
Juice of half a lime
A handful of fresh dill (finely chopped)
Salt & pepper to taste
4 slices of bread (gluten free if necessary)
½ cucumber (thickly sliced)
1 avocado
Juice of ½ lime
Salt & pepper to taste
3-4 lettuce leaves

Steps:

  • Place rinsed and drained chickpeas in a big mixing bowl and mash with a potato masher to 'smash' into smaller pieces. You can also use a food processor, which will be a lot quicker. Just ensure you don't over-process the chickpeas to retain that chunky texture.
  • Add the rest of the tuna ingredients into the mixing bowl and mix until well combined. Season with salt & pepper.
  • In a separate small bowl, mash the avocado with a fork. Mix in lime juice, salt & pepper and set aside.
  • To assemble the sandwich, spread mashed avocado evenly on the bread slices. Layer with lettuce leaves, tuna mixture, cucumber slices and add the second slice of bread on top. Voila!

2 15 oz. cans of chickpeas (garbanzo beans), drained and rinsed (3 cups)
1 ripe avocado, pitted and mashed (120 g)
2 celery stalks and leaves, minced (1 cup, 140 g)
½ red onion, minced (1/2 cup, 70 g)
1-2 tbsp dijon or yellow mustard (30 g)
2 tbsp minced dill pickles (20 g)
1/2 tsp kosher salt
1/2 tsp ground black pepper
sandwich bread, for serving

Steps:

  • Pulse the garbanzo beans in a food processor. They don't need a lot of processing, just enough to get that flaky "fish" texture. Pulse 3-4 times, then scrape down the bowl and do a few more, if needed.
  • In a mixing bowl, mash the avocado into a paste using a fork. Add the rest of the ingredients, including the blended chickpeas and stir until fully incorporated.
  • Taste and adjust seasoning if needed.
  • Enjoy as is or scoop onto your favourite sandwich bread topped with sprouts, pickles, onion and lettuce!

1/4 C finely chopped red onion
1/3 C vegan mayonnaise
1 tbsp lemon juice
1/2 tsp Old Bay seasoning
1/4 tsp sea salt
1/4 tsp ground black pepper

Steps:

  • Drain and rinse the chickpeas. Mash them in a bowl with a potato masher or fork.
  • Add the remaining ingredients and combine well. Store in the fridge for up to 5 days and make up sandwiches as you need for the week.
  • I really like topping my chickpea tuna sandwiches with lettuce, tomato, and avocado, but feel free to add whatever you like!
