My sister and I have had a really hard time recreating beef soup mix flavors. She's been begging me to try out some seasoning mixes that can approximate and substitute for it, and I think this one is pretty good. I'm open to suggestions if anyone has any!

4 dried shiitake mushrooms, diced
1/2 teaspoon dried basil
1 teaspoon dried bay leaf, crushed
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon paprika
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

Dice or grind the shiitaki mushrooms finely.
Mix with all other spices.
Seal in jar or ziplock bag.
To use: mix 1/2 tablespoon spice mix with 1 cup hot water.

VEGAN "BEEF" BROTH

Vegan

This makes a good vegan broth that can be used in recipes that call for beef broth (such as French onion soup). I've had it for a while, and am unsure about the origin of it and how close or distant my version is from the original recipe. Also, as with any broth, you don't have to follow the recipe exactly. Fill the pot up and just be more liberal with the ingredients! Freeze whatever you don't need, or refrigerate for a few days.

Ingredients

1 yellow onion, chopped
3 ribs celery, chopped
2 carrots, chopped
2 leeks, chopped
4 cloves garlic, diced
12 cups water
1 cup chopped fresh parsley
2 teaspoons dried thyme
2 teaspoons dried oregano
2 bay leaves
salt and ground black pepper to taste
¼ cup soy sauce
3 teaspoons liquid smoke
1 teaspoon vegan Worcestershire sauce

Steps:

Saute onion in a large nonstick soup pot over medium heat for 5 minutes. Add celery, carrots, leeks, and garlic; saute for 10 minutes. Add water, parsley, thyme, oregano, bay leaves, salt, and pepper. Bring to a boil, lower heat to medium-low, and simmer for 30 minutes.
Add soy sauce, liquid smoke, and vegan Worcestershire sauce; simmer for 1 hour. Remove and discard vegetables and bay leaves with a slotted spoon.

2 tablespoons dried minced onion
2 tablespoons onion powder
2 tablespoons salt
ADDITIONAL INGREDIENTS:
2 cups fresh or frozen cut green beans or vegetable of your choice
1 tablespoon butter
1 tablespoon slivered almonds, toasted

Steps:

In a bowl, combine the first five ingredients. Store in an airtight container in a cool, dry place for up to 1 year. Yield: 24-30 batches (1/2 cup total). , To use seasoning mix: Cook and drain vegetables. Add butter and 1/2 to 1 teaspoon seasoning mix; toss until butter is melted. Sprinkle with almonds.
