1 (28 ounce) can whole peeled tomatoes, drained, juice reserved
4 tablespoons olive oil, divided
1 medium onion, finely chopped
3 cloves garlic, minced
1 (8 ounce) can tomato sauce
1 teaspoon dried oregano
1 ¼ teaspoons salt, divided
½ teaspoon freshly ground black pepper, divided
1 pound meatless ground beef substitute (such as Beyond Meat® Beyond Beef Plant-Based Ground)
1 tablespoon vegan bread crumbs
1 ½ teaspoons dried parsley flakes
¼ teaspoon garlic powder
¼ teaspoon onion powder
1 (12 ounce) package spaghetti

Steps:

  • Dice tomatoes and return them to the can with their juice.
  • Heat 2 tablespoons olive oil in a saucepan over medium-high heat. Add onion and garlic to the hot oil and saute, stirring frequently, for 2 minutes. Stir in diced tomatoes and their juice, tomato sauce, oregano, 1/2 teaspoon salt, and 1/4 teaspoon pepper until well blended. Bring sauce to a simmer and reduce heat to low. Let simmer while preparing meatballs.
  • Combine beef substitute with bread crumbs, parsley, remaining 3/4 teaspoon salt, remaining 1/4 teaspoon pepper, garlic powder, and onion powder in a bowl; mix until ingredients are well combined. Roll the mixture into twelve 1 1/2-inch balls.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, heat remaining 2 tablespoons olive oil in a deep skillet or Dutch oven over medium-high heat. Add meatballs to the pan and saute, turning occasionally, until all sides are browned and a bit crisp, about 10 minutes total. Reduce heat to low.
  • Pour simmering tomato sauce over the meatballs and mix. Simmer sauce with meatballs for an additional 10 minutes. Serve meatballs and sauce over spaghetti.

I found this recipe at eatbetteramerica.com This is one of my favorites! I absolutely love it. I am posting the recipe as written but I use my own recipe for marinara sauce. I also use whole wheat breadcrumbs. I find that whole wheat is a little heartier. Serving size is enough for 6 people to have two meatballs each. So keep that in mind when you make this.

1 (16 ounce) package uncooked spaghetti
2 cups cooked brown rice (can use white rice instead if desired)
1/2 cup quick-cooking oats
1 medium onion, chopped (1/2 cup)
1/4 cup plain breadcrumbs
1/4 cup milk
1 teaspoon dried basil leaves
1/2 teaspoon dried oregano leaves
1/4 teaspoon ground red pepper (cayenne) (optional)
1 egg, beaten
1/2 cup wheat germ
1 tablespoon vegetable oil
2 cups pasta sauce
shredded parmesan cheese, if desired

Steps:

  • Cook and drain spaghetti as directed on package.
  • In large bowl, mix rice, oats, onion, bread crumbs, milk, basil, oregano, red pepper (if desired) and egg. Shape into 12 balls. Roll balls in wheat germ.
  • In 10-inch skillet, heat oil over medium heat. Cook balls in oil about 10 minutes, turning occasionally, until golden brown.
  • Heat pasta sauce until hot. Serve sauce and "meat" balls over spaghetti. Sprinkle with cheese.

Steps:

  • Cook spaghetti as directed on package, omitting salt.
  • Meanwhile, microwave crumbles in medium microwaveable bowl on HIGH 30 sec. Stir in bread crumbs, egg product and 1/2 cup pasta sauce. Let stand 5 min. Shape into 12 balls.
  • Cook "meatballs" in hot oil on medium heat 8 min. or until cooked through (160º) and evenly browned, stirring frequently. Stir in remaining sauce. Cook 2 min. or until heated through, stirring occasionally.

1/2 cup dried red kidney beans or 1 (14 ounce) can red kidney beans
1 pinch sea salt
2 teaspoons dried oregano
2 teaspoons thyme
1 tablespoon tomato juice (from can)
1/4 cup whole grain flour, approximately
2 garlic cloves, minced
1 teaspoon olive oil
1 (28 ounce) can diced tomatoes
1 pinch sea salt

Steps:

  • To use dried beans in this recipe, they must be fully cooked before you begin. You should soak kidney beans in lots of water overnight, then drain. Cover them by 2 inches with fresh water, do NOT add any salt, and gently boil them for 1 hour. Adding a bit of kombu (seaweed) to the water while they cook will improve their digestibility.
  • To use canned beans, look for one that doesn't have any salt listed in the ingredients. Before using, rinse and drain the beans.
  • Mash the cooked kidney beans and season. Add flour as needed to bind them together. Form this into small balls, and bake at 350 degrees F for 20-30 minutes.
  • Saute the garlic in olive oil, then add the tomatoes and seasonings. Leave this to simmer.
  • Bring a pot of lightly salted water to a boil and add the noodles. They will take about 10 minutes to cook.
  • Drain the noodles, and stir in a small amount of tomato sauce with them. Serve with more sauce and topped with 3-4 'meatballs'.

1 medium carrot, shredded
¼ finely chopped sun-dried tomatoes, packed in oil

1 ¼ pounds vegetarian ground beef substitute (such as Beyond Meat® Beyond Beef®)
1 teaspoon dried parsley
1 tablespoon herbes de Provence
1 teaspoon granulated garlic
1 teaspoon granulated onion

1 (28 ounce) can crushed tomatoes
1 (15 ounce) jar tomato sauce
2 tablespoons olive oil
2 tablespoons balsamic vinegar

Steps:

  • Combine water and flaxseed meal in a small bowl and stir together until well combined. Set aside and let flax "egg" thicken for 5 minutes.
  • Combine beans, carrot, sun-dried tomatoes, and olive oil together in a food processor; puree until well combined. Transfer to a mixing bowl and add flax egg, beef substitute, parsley, herbes de Provence, garlic, onion, salt, and pepper. Mix everything together with your hands until thoroughly combined. Refrigerate "meat" mixture for 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Form mixture into 2-inch balls and set on the prepared baking sheet.
  • Bake meatballs in the preheated oven for 14 minutes, turning over halfway through. Remove from the oven and let rest while you start on the marinara.
  • Combine crushed tomatoes, tomato sauce, olive oil, balsamic vinegar, herbes de Provence, sugar, onion, garlic, and salt in a wide saucepan or skillet. Bring to a boil over medium-high heat. Add meatballs, reduce heat, and simmer over low heat for at least 30 minutes.
