NO-MEAT TATER TOT CASSEROLE (VEGETARIAN)
Rich-tasting comfort food that's easy and yummy! I like to have a salad and a piece of bread and I call it dinner! Serve as a side dish or a vegetarian entree!

Steps:
- Saute onion and celery in oil until tender.
- Set aside to cool slightly.
- Scrape into mixing bowl.
- Add soup, garlic powder, pepper, and half and half.
- Mix well.
- Add frozen tater tots (reserve a handful first) and toss well.
- Spray a casserole dish (I use my 13X9 square Pyrex baking dish) with Pam.
- Pour mixture into dish.
- Arrange reserved tots over top.
- Cover with cheese.
- Bake at 350 for 45 to 50 minutes until cheese is melted and just barely starting to brown.
- Cool slightly before serving.
VEGETARIAN HASH BROWN CASSEROLE
This is a simple and delicious vegetarian version of a hash brown casserole with pico de gallo salsa. It may be made ahead of time and refrigerated.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch glass pan with olive oil cooking spray.
- Spread out hash browns in 2 layers to fit the prepared pan. Sprinkle Cheddar cheese on top and pour pico de gallo over the cheese.
- Whisk together eggs and milk; pour evenly over the salsa layer. Season with salt and pepper. Cover dish with aluminum foil.
- Bake in the preheated oven for 1 hour. Remove foil and bake until top is golden brown, an additional 5 to 10 minutes.

Steps:
- Pre-heat oven to 350 degrees.
- Saute Boca Crumbles in olive oil over medium heat, stirring frequently, in large saute pan for approximately 8-10 minutes or until evenly browned.
- Add green beans and chopped onion saute for an additional 2 mins., stirring frequently.
- Add minced garlic and saute for one additional minute, stirring frequently.
- Add cream of mushroom soup, mixing thoroughly on reduced heat for approximately 1-2 minutes.
- Place mixture in 9" x 13" rectangular cake pan.
- Cover mixture with frozen tater tots in neat rows.
- Bake in 350 degree oven for approximately 18-20 mins., or until tater tots are golden brown.

- Preheat the oven to 350 degrees F (175 degrees C).
- Spray a skillet with cooking spray and heat over medium heat. Cook mushroom patties in the pan until halfway cooked through, 7 to 9 minutes. Remove from heat and let cool, about 5 minutes. Chop finely on a cutting board. Line the bottom of a rectangular or square 2 1/2-quart baking dish with patty pieces. Pour chili on top and spread evenly. Layer potato nuggets over chili.

Steps:
- Preheat the oven to 350°F (180°C).
- Cut the head of cauliflower in half, remove the stem, and chop into small pieces. Set aside.
- Heat the oil in a large cast-iron skillet over medium heat. Add the garlic and onion and cook until fragrant, about 2 minutes.
- Add the corn, carrots, black beans, and 2 cups (600 g) of cauliflower and cook, stirring often, for another 3 minutes, until the corn starts to brown around the edges.
- Add the flour, chili powder, and salt and stir until the vegetables are evenly coated.
- Add the milk and diced tomatoes and cook, stirring constantly, until thickened, about 3 minutes.

- Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread refried beans evenly in bottom of baking dish.
