HEALTHIER VEGGIE FRIED RICE RECIPE BY TASTY

Healthier Veggie Fried Rice Recipe by Tasty image

Here's what you need: brown rice, vegetable broth, carrots, oil, white onion, garlic, frozen peas, salt, pepper, eggs, scallion

Provided by Tiffany Lo

Categories     Lunch

Yield 2 servings

Number Of Ingredients 11

2 cups brown rice
2 cups vegetable broth
2 carrots, diced
1 tablespoon oil
½ white onion, diced
2 cloves garlic, minced
½ cup frozen peas
salt, to taste
pepper, to taste
2 eggs, whisked
scallion, sliced, for garnish

Steps:

  • Add the brown rice, vegetable broth, and diced carrots to your Instant Pot. Stir until combined.
  • Close the lid until you hear the beep. Tip: Closing the lid can be tricky. Have the pressure knob at 11 o'clock and turn right.
  • Turn pressure knob to "Sealing". Select Manual and reduce the time to 24 minutes. It will say "On" in a few seconds. Note: the Instant Pot will need to warm up for 5-10 minutes. Steam will be released and a few minutes later, the time will start counting down.
  • Once the time goes off, carefully turn the pressure knob to "Venting". Let all of the stream release before opening the lid.
  • Stir the rice, then transfer from the pot into a medium sized bowl and set aside.
  • Select "Saute" on the Instant Pot. Once it says "Hot", add the oil.
  • When the oil is shimmering, add the onion. Cook for around 1 minute until slightly opaque.
  • Add the minced garlic, frozen peas, salt, and pepper. Mix until incorporated.
  • Add rice mixture and stir until everything is combined.
  • Make a well in the middle of the rice for the eggs. Pour the beaten eggs into the well, stirring only the eggs until they are cooked.
  • Mix everything together. Top with scallions.
  • Enjoy!

VEGGIE FRIED RICE (VEGAN)

Veggie Fried Rice (Vegan) image

This fits the bill when I'm craving Chinese take-out minus the MSG. The TVP makes a great substitute for egg and boosts the protein content without adding cholesterol. This is inspired by a recipe I found here: http://ericglover.com/Vegetarian_Vegan_Fried_Rice_Recipe.html. Prep time is for cooking rice while chopping veggies. Serves about 4 as an entree or 6 as a side.

Provided by Prose

Categories     < 60 Mins

Time 1h

Yield 6 serving(s)

Number Of Ingredients 17

3 cups cooked brown rice
4 garlic cloves, chopped
1 medium onion, chopped
3 carrots, chopped
2 stalks celery, chopped
8 button mushrooms, chopped
1/2 cup textured vegetable protein (dry)
1/2 cup water
3 tablespoons low sodium soy sauce
5 tablespoons extra virgin olive oil or 5 tablespoons canola oil
1/2 teaspoon sage (fresh or dried)
1/2 teaspoon fresh thyme
1/4 teaspoon turmeric
1/8 teaspoon cayenne (optional)
1/4 teaspoon black pepper
1/4 teaspoon ginger powder
1 cup edamame (frozen, shelled) or 1 cup frozen peas

Steps:

  • Be sure that the rice is cooked and the veggies are chopped before you begin.
  • Mix TVP, water, sage, and 1 tablespoon soy sauce. Set aside for at least 5 minutes or until the water is absorbed.
  • Heat 4 tablespoons of oil over medium heat in wok or very large skillet. Add garlic, onions, carrots, and celery. Sautee for a couple of minutes, then add mushrooms and 2 tablespoons soy sauce, and cook a couple more minutes until onion starts to turn translucent. Do not cook the vegetables quite all the way at this point.
  • Stir in TVP, then move vegetables to the perimeter of the wok. Add rice to center of wok, then stir in remaining oil and soy sauce (1 tablespoon each). Add the remaining spices. Fry the rice, turning occasionally with a rubber spatula, taking care not to burn it or the veggies. You can add a little water if necessary.
  • Stir in edamame or peas. Turn off the heat and stir until the edamame is heated.

  • Start with a hot cast iron skillet that has been seasoned well, this way you won’t need to even use any oil. Quickly sir-fry / the pineapple chunks until little caramelization takes place. Once the desire color is achieved transfer to a bowl. (If you don't have a seasoned cast iron skillet use whatever skillet you have available with a drizzle of sesame oil or a drop of water).
  • Add the bell pepper and onion to the hot skillet stirring quickly until they start to get some color. Work quickly and take good care not to burn anything. If you feel the pan is getting too hot and anything sticks just add a little splash of water to get things moving. Scoop out the onion and pepper and reserve together with the pineapple.
  • In the same skillet add the purple cabbage and stir fry just a minute or so until it starts to wilt. Move it to the side and add a little drop of oil (use water for WFPB & Plantricious diets) and add the garlic. Cook until just fragrant quickly stirring so it won’t burn.

EXTRA VEGETABLE FRIED RICE - COOKIE AND KATE

2017-05-02  · The Best Vegetable Fried Rice. I designed this recipe to work well in a regular skillet (preferably cast iron), since most of us don’t have woks at home. The only tricky part, which really isn’t so difficult, is to cook the eggs, vegetables and rice separately, and combine them all at the end. That way, each component will be cooked just right, and the vegetables and rice …

  • This recipe comes together quickly. Before you get started, make sure that all of your ingredients are prepped and within an arm’s reach from the stove. Also have an empty bowl nearby for holding the cooked eggs and veggies. I’m suggesting that you start over medium-high heat, but if at any point you catch a whiff of oil or food burning, reduce the heat to medium.
  • Warm a large cast iron or stainless steel skillet over medium-high heat until a few drops of water evaporate within a couple of seconds. Immediately add 1 1/2 teaspoons of oil and swirl the pan to coat the bottom. Add the scrambled eggs and swirl the pan so they cover the bottom. Cook until they are just lightly set, flipping or stirring along the way. Transfer the eggs to a bowl and wipe out the pan with a heat-proof spatula.
  • Return the pan to heat and add 1 tablespoon of oil. Add the onion and carrots and cook, stirring often, until the onions are translucent and the carrots are tender, about 3 to 5 minutes.
  • Add the remaining veggies and salt. Continue cooking, stirring occasionally (don’t stir too often, or the veggies won’t have a chance to turn golden on the edges), until the veggies are cooked through and turning golden, about 3 to 5 more minutes. In the meantime, use the edge of your spatula or a spoon to break up the scrambled eggs into smaller pieces.

  • Once all your ingredients have been prepped, add your sesame oil to your wok and heat. Once your wok and oil have heated up add in your onion, garlic, ginger and carrots. Sautee until your onions are translucent. To help your carrots cook all the way through cover with a lid to steam and sweat a little bit.
  • Once your onions are translucent add your mushrooms and sautee for a minute or two. Add your corn and peas and toss to defrost and cook for about 1-2 minutes.
  • Add in your rice and soy sauce and toss to coat. All it to cook untouched for about 2-3 minutes if you would like some of the rice to crisp up. Toss then repeat.

I prefer short grain/sushi rice for this recipe and have tips and tricks in the blog post on how to cook rice, but any rice works. If using short grain/sushi rice it is 1 1/2 cups of uncooked rice & 2 cups water needed for this amount of cooked rice. If using a different rice, follow package instructions. The rice can also be made the day before and is actually better if cold and refrigerated!
  • Once the rice is has been cooked, prep the rest of the ingredients. First, chop all the vegetables including the carrots and onions and set aside the peas and edamame. Then, whisk together the soy sauce, rice wine vinegar, and sugar to form a thin sauce.

  • Preheat oven to 400 degrees F (204 C) and line a baking sheet with parchment paper (or lightly grease with non-stick spray).
  • In the meantime wrap tofu in a clean, absorbent towel and set something heavy on top (such as a cast iron skillet) to press out the liquid.
  • Once the oven is preheated, dice tofu into 1/4-inch cubes and arrange on baking sheet. Bake for 26-30 minutes. You’re looking for golden brown edges and a texture that’s firm to the touch. The longer it bakes, the firmer and crispier it will become, so if you’re looking for softer tofu remove from the oven around the 26-28 minute mark. I prefer crispy tofu, so I bake mine the full 30 minutes. Set aside.
  • While the tofu bakes prepare your rice by bringing 12 cups of water to a boil in a large pot. Once boiling, add rinsed rice and stir. Boil on high uncovered for 30 minutes, then strain for 10 seconds and return to pot removed from the heat. Cover with a lid and let steam for 10 minutes*.
