Velveeta Potatoes Au Gratin image

This is simple and very good! The potatoes are best when cooked and completely chilled before slicing and using in this recipe, so if possible make the potatoes a day ahead, cover and refrigerate overnight.

4 large russet potatoes, peeled and halved
1 large onion, chopped
1 (8 ounce) package Velveeta cheese, diced
seasoning salt (or use white salt, seasoned salt is best!)
black pepper
1 cup whipping cream
grated parmesan cheese

Steps:

  • Cook the potato halves in boiling salted water until just firm tender.
  • Let cool to room temperature then chill until completely cold.
  • When potatoes are cold slice about 1/3-inch thick (or a little larger).
  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch casserole dish.
  • Layer half of the chilled sliced potatoes in the bottom of the buttered dish, sprinkle with salt and pepper on top.
  • Then sprinkle with half of the onion, then half of the Velveeta cheese.
  • Repeat the layers.
  • Drizzle with the whiping cream, then sprinkle with grated Parmesan cheese on top.
  • Bake for about 50 minutes.

Steps:

  • Spray a 9x13-inch baking dish and layer the potatoes and Velveeta cheese.
  • Make sauce by melting butter, whisk in flour, then gradually add milk, stirring constantly until thickened.
  • Add salt and pepper to taste and pour over potato cheese casserole.
  • Bake at 350° for 1 hour or until potatoes are tender.

1 small onion, diced
1/2 loaf Velveeta, cut into cubes
2 cups Kraft Shredded Sharp Cheddar Cheese
1 large can cream of mushroom soup
1 can mushrooms, drained
1 container (16 oz.) sour cream
1/2 tsp coarsely ground pepper
1 large bag frozen shredded potatoes

Steps:

  • Set your crock-pot on medium heat. In a small frying pan on medium heat melt butter and add onions. Cook until clear. Put onions into crock-pot.
  • Add all ingredients accept for potatoes. Cook for one hour stirring every 20 minutes.
  • Add potatoes and fold them in. Turn crock-pot to low and cook for an additional couple of hours until creamy and thick. Do Not Over Stir! Great for entertaining and holidays.

1/2 cup chopped onions
1 tsp. dry mustard
1/4 tsp. pepper
1/4 cup milk

Steps:

  • Heat oven to 350°F.
  • Cook potatoes in boiling water in large saucepan 8 to 10 min. or until tender; drain. Return potatoes to pan.
  • Add remaining ingredients; mix lightly. Spoon into 2-qt. casserole sprayed with cooking spray; cover.
  • Bake 22 to 25 min. or until potatoes are tender. Stir gently before serving.
