DREW'S VENISON STEAKS AND GRAVY

I've been making this comfort food forever, and it's DH's favorite. I especially like the creamy gravy over rice or mashed potatoes. If you want a stroganoff-like gravy, stir in 8 ounces of sour cream at the last minute, and serve over wide noodles!

1 lb cubed venison
1 package dry lipton onion and mushroom soup mix
2 teaspoons beef bouillon
1/2-1 cup water
1/2 cup white wine or 1/2 cup water
2 large onions, thinly sliced or diced
salt and pepper, to taste
1 (4 ounce) can sliced mushrooms, drained or 2 ounces dried mushrooms (optional)
2 tablespoons cornstarch
1/4 cup water

Steps:

  • Spray cast iron skillet with non-stick cooking spray and heat on high.
  • Cut cubed venison into serving-size pieces.
  • Brown venison on each side, about 1 minute.
  • In bowl, add 1/2 cup water, wine, bouillon and soup mix.
  • Stir to mix well.
  • Add soup mixture to skillet, along with onions (and mushrooms if you decide to use them).
  • Cover skillet and lower heat to simmer.
  • Cook about 30-45 minutes (gravy will thicken).
  • Add a little more water if gravy gets too thick before meat is fork-tender.
  • GRAVY: When meat is very tender, mix cornstarch with water to make a slurry.
  • Pour slurry into hot liquids in skillet, stirring until gravy returns to a boil and is thickened.
  • Serve steaks with gravy over steamed rice or mashed potatoes.
  • FOR A STROGANOFF: Stir in 8 ounces sour cream, heat until warm but not boiling.
  • Serve over wide noodles.
  • Variations: Other seasonings you could add: 1/4 tsp thyme, 1/2 tsp basil, 1/2 tsp oregano, OR 1/2 tsp Italian seasoning.
  • If you like hot/spicy foods, add 1/4-1/2 tsp crushed red peppers.

Like I said it's been 10 years since I did this recipe, but I remember them as being excellent. Both the family and company liked them. If you have a "tough old buck", marinate them overnight in port wine or any good red wine.

1 1/2-2 lbs venison chops, 3/4 to 1 inch thick
2 tablespoons butter or 2 tablespoons margarine
1/2 teaspoon marjoram
2 tablespoons butter
1 cup sliced fresh mushrooms
1/4 cup port wine
1 tablespoon sour cream
salt and pepper

Steps:

  • Heat the butter in a large, heavy frying pan (cast iron is best) over medium-high heat.
  • Sprinkle marjoram on each side of the chops Fry the chops on each side for approximately 5 minutes.
  • Move the chops to a heated platter and place the platter in a warm (150°F) oven.
  • Pour the mushroom sauce into the frying pan and scrape the bottom to loosen meat particles.
  • Spoon the sauce over the chops and serve immediately.
  • Mushroom Sauce-----------.
  • In a small frying pan over medium heat, fry the mushrooms for 5 minutes in butter.
  • Add the wine and turn the heat to high for 2 minutes.
  • Lower the heat.
  • Blend in the sour cream and the salt and pepper.
  • Pour the mushroom mixture into the large frying pan, that you cooked the chops in and deglaze the pan.

6 (6 to 7-ounce) venison chops
1 tablespoon juniper berries
1 tablespoon coriander seeds
3 star anise
1 teaspoon salt
1/4 teaspoon black peppercorns
1 tablespoon olive oil
2 shallots, minced
2 cups white mushrooms, cleaned, trimmed and sliced
1 (750-ml) bottle dry red wine
Salt and freshly ground black pepper
1 cup bulgur (because it is pre-steamed, it can be soaked in boiling water to make it meal-ready)
1/2 teaspoon salt

Steps:

  • Rinse venison chops and pat dry with paper towels. In a coffee grinder dedicated to spices or with a mortar and pestle, grind the juniper berries, coriander seeds, star anise, salt and peppercorns together into a powder. Rub all sides of the chops with the spice mixture. Heat the olive oil over medium-high heat in a large saute pan (deep enough to accommodate the chops and sauce) and sear the chops, leaving undisturbed for 2 minutes on each side to allow the spices to integrate into the surface of the meat. Remove chops to a utility platter.
  • In the same pan, over medium-high heat, saute the shallots until translucent. Add the mushrooms and cook until they give up their juices. Add the wine and let cook for about 5 minutes. Then reduce heat to medium-low, return the chops to the pan, cover, and let cook until the chops are tender, about 35 minutes. Transfer the chops to a platter and increase the heat under the pan of mushrooms and sauce and allow to reduce by two-thirds.
  • While the chops are cooking and the sauce is reducing, prepare the bulgur porridge which was traditionally served with venison as a digestive aid. Because it is pre-steamed, it can be soaked in boiling water to make it meal-ready. Put bulgur and salt in a mixing bowl. Add 2 1/2 cups boiling water, cover and let stand for 30 minutes.
  • To serve, place some bulgur porridge in the middle of each serving plate. Top with a venison chop and spoon mushrooms and sauce over and around.

1 ½ pound venison chops (cut into 1 ½ inch pieces)
1 tablespoon soy sauce
1 teaspoon sugar
1 ¾ cups beef broth
¼ ounce dried Shiitake mushrooms
1 pound white mushrooms (sliced ¼ inch thick)
Salt and pepper
2 tablespoons vegetable oil
1 large onion (sliced thin)
4 teaspoons all-purpose flour
1 garlic clove (minced)
¼ teaspoon thyme

Steps:

  • Combine sugar and soy sauce into a medium-size bowl. Toss the venison in the mixture coat and marinate 30 minutes to one hour; tossing occasionally.
  • While venison is marinating place ¼ cup beef broth into a small microwaveable bowl along with the dried mushrooms. Microwave for about 1 minute or until mixture is steaming, cover, and let the mushrooms set until softened. Place a coffee filter into a strainer and drain the liquid though the filter. Reserve the liquid, chop the mushrooms and set them aside separately.
  • Drain any leftover marinate from the chops if necessary. Season the chops with ½ teaspoon pepper. In a large skillet over medium-high heat using 1 tablespoon of the vegetable oil cook the chops until well browned and almost done. Remove the chops to a platter and set aside.
  • In the same skillet over medium-high heat add the other tablespoon of oil, white mushrooms, minced shiitake mushrooms, and ¼ teaspoon salt. Cook string frequently until all liquid is evaporated and mushrooms start to brown. Add the onion and another ¼ teaspoon salt to the mushroom mixture and cook stirring frequently until onion is soft, and starts to brown.
  • Add the flour, garlic, thyme, and continue cooking and stirring until mixture is coated with the flour. Add the remaining broth, and the liquid set aside from the dried mushrooms. Stir to release any dripping from the bottom of the pan. Arrange the chops into the onion and mushrooms along with any juices that settled on the bottom of the platter. Cook over medium-low heat until juices have thickened and chops are cooked to desired doneness. (When I browned the chops I cooked them to the desired done-ness I wanted so they just had to be heated through in the mushroom-onion mixture)
  • Serve over noodles or mashed potatoes

4 boneless pork chops, 1-inch thick
½ teaspoon seasoning salt, or to taste
1 tablespoon oil
2 cups chicken broth
1 cup sliced button mushrooms
1 small chopped onion
2 tablespoons butter
¼ cup flour, or more as needed

Steps:

  • Trim fat off pork chops and season generously with seasoning salt.
  • Heat oil in a large skillet over medium heat. Add pork chops and cook until browned, 3 to 4 minutes per side. Transfer pork chops to a plate.
  • Pour chicken broth into the skillet and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add mushrooms, onion, and butter; simmer for 5 minutes. Transfer 2 tablespoons of sauce to a small bowl.
  • Add flour to the sauce in the bowl and mix with a fork until no lumps remain. Pour slurry back into the skillet and stir until combined with the sauce.
  • Return pork chops to the skillet. Cover and simmer for 15 minutes. Remove lid and continue cooking until gravy has reached desired thickness and pork chops are no longer pink in the center. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). For a thicker gravy, mix in more flour.

½ teaspoon ground sage
½ teaspoon salt
½ teaspoon black pepper
4 tablespoons butter, divided
1 cup chopped Vidalia onion

1 tablespoon all-purpose flour
¾ cup sherry

Steps:
