PAN-SEARED PORK WITH PINEAPPLE-KIWI SALSA



Pan-Seared Pork with Pineapple-Kiwi Salsa image

Rejuvenate leftover pork slices by pan-searing them in olive oil (to create a golden brown crust) and then freshen everything up with a lively pineapple-kiwi salsa. If you want, you can also make this dish with boneless pork loin chops or lean sirloin steak (just cook the meat longer if you're starting from raw). I like to round out the dish with a store-bought mixed bean salad or combination of rice and black beans.

1 cup diced pineapple (fresh or canned in juice)
1 cup peeled and diced kiwi (about 2 or 3 whole kiwi)
2 tablespoons chopped fresh cilantro leaves
1 jalapeno, seeded and minced
1 tablespoon fresh lime juice
Salt and freshly ground black pepper
1 tablespoon olive oil
1 pound leftover roasted pork tenderloin, sliced crosswise into 1-inch thick slices
1 tablespoon chili powder

Steps:

  • In a medium bowl, combine the pineapple, kiwi, cilantro, jalapeno, and lime juice and toss to combine. Season, to taste, with salt and pepper and set aside.
  • Heat the oil in a large skillet over medium heat. Season both sides of the pork slices with salt and pepper. Rub the chili powder into both sides of the pork. Add the pork to the hot pan and sear 2 minutes per side, until golden brown. Serve the pork with the salsa spooned over the top.

1 cup medium- or long-grain white rice
1 pineapple, peeled, quartered lengthwise and cored
1 tablespoon minced peeled ginger
1 tablespoon vegetable oil
1 tablespoon soy sauce, plus a splash for the salsa
1/2 teaspoon Chinese five-spice powder
1 bunch scallions
4 bone-in pork sirloin chops (1/2 inch thick; about 1 3/4 pounds)
Pinch of red pepper flakes

Steps:

  • Combine the rice and 1 2/3 cups water in a medium saucepan and bring to a boil. Cover, reduce the heat to low and cook until the rice is tender and the water is absorbed, about 15 minutes. Remove from the heat and let stand until ready to serve.
  • Meanwhile, cut off a 2-inch piece of the pineapple and grate it on the coarse holes of a box grater into a large bowl. Stir in the ginger, vegetable oil, 1 tablespoon soy sauce and 1/4 teaspoon five-spice powder. Add the scallions and pork chops and turn to coat; let marinate at room temperature, 10 minutes. Rub the remaining pineapple with the remaining 1/4 teaspoon five-spice powder.
  • Preheat a grill to medium high. Grill the pork chops until just cooked through, about 3 minutes per side. Grill the scallions and pineapple, turning occasionally, until charred, about 3 minutes.
  • Roughly chop the pineapple and scallions and transfer to a bowl. Add the red pepper flakes and a splash of soy sauce and toss. Serve the pork chops with the pineapple salsa and rice.

1 pork tenderloin (1-1/4 pounds)
3 tablespoons brown sugar, divided
2 tablespoons Dijon mustard
1 teaspoon paprika
1/2 teaspoon ground ginger
1/3 cup finely chopped sweet red or green pepper
1/4 cup chopped green onions
1/8 teaspoon crushed red pepper flakes, optional

Steps:

  • Drain pineapple, reserving 1/4 cup juice. Set aside 1 cup of pineapple (save remaining pineapple for another use). Place the pork on a rack in a shallow roasting pan. Combine 2 tablespoons brown sugar, mustard, paprika and ginger. Spread half over the pork. , Bake, uncovered at 450° for 15 minutes. Spread with remaining brown sugar mixture. Bake 15-20 minutes longer or until a thermometer reads 160°, Meanwhile, for salsa, in a small bowl, combine the red pepper, onions, pepper flakes if desired, remaining brown sugar, reserved pineapple and juice. 1 tablespoon chili powder
1 ½ tablespoons light brown sugar, packed

3 slices pineapple, cut crosswise about 1/2-inch thick, trimmed OR canned pineapple slices, drained
1 jalapeno pepper, halved lengthwise, seeds and veins removed
1 tablespoon lime juice

  • In a shallow bowl, combine chili powder, brown sugar, garlic powder, onion powder, and salt. Sprinkle both sides of pork with spice mixture.

1 1/2 cups long grain rice
1 1/2 tablespoons sesame seeds, toasted
1 tablespoon vegetable oil
4 slices canned pineapple, chopped fine
1/2 cup pineapple liquid
1/4 chipotle chile in adobo, minced
1/4 teaspoon ground cumin
2 tablespoons fresh cilantro, chopped

Steps:

  • In a medium bowl, combine sausage and half of the green onions; season with salt and pepper; shape into 16 meatballs.
  • Bring 3 cups water to a boil in a medium saucepan.
  • Stir in rice, cover, and simmer for 15 minutes.
  • Stir in sesame seeds.
  • Meanwhile, in a large skillet, heat the oil over medium heat.
  • Cook meatballs about 15 minutes, turning so they brown evenly.

I love a sweet/spicy salsa especially over my pork. Another ediets recipe that's healthy and delicious. For added flavor, sautee an onion with the pork.

1 pork chop, lean (with or without bone)
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon black pepper
6 tablespoons salsa
1/2 cup pineapple chunk
1 tablespoon fresh cilantro
1/2 teaspoon oregano
2 teaspoons olive oil

Steps:

  • Combine chili powder, cumin, paprika, black pepper and rub over both sides of pork.
  • Heat oil over medium heat.
  • Saute pork about 3-5 minutes on each side or until done.
  • Remove from pan, cover and keep warm (putting it in the microwave works great- of course, don't turn it on) Using the same skillet, add pineapple with juice and salsa.
  • Raise heat to medium-high and bring to a boil.
  • Cook 1-2 minutes, add cilantro and oregano, and continue to cook for 1-2 more minutes, or until sauce is thickened.
  • Serve pork over a bed of rice and top with sauce.
