SMORES GRANOLA BITES
Steps:
- Line a baking sheet with a silicone mat, parchment paper or foil and spray lightly with nonstick cooking spray.
- Put the chocolate in a heat-safe glass bowl and set over a pot filled with an inch of water. Place the pot over medium-low heat and gently cook the chocolate, stirring occasionally, until melted. Add the sea salt.
- Mix the granola, graham cereal and toffee bits in a shallow dish.
- Using two forks, dip the marshmallow rounds in the melted chocolate, letting excess chocolate drip off. Roll in the granola mixture, then transfer to the prepared baking sheet. Refrigerate on the baking sheet until the chocolate is set, 10 to 15 minutes. Store in an airtight container if not using immediately.

- Reconstitute any of the fruit that is not moist and tender by placing it in a bowl and covering it with warm water. Depending on how dry it is, this could take up to 15 minutes. Drain off the excess water and pat dry with a paper towel.
- Put the almonds in a food processor and process until small pieces form, but before it becomes a paste. Pulse as needed. Add the blueberries, cherries, dates, and flaxseed meal. Pulse until the mixture pulls away from the sides, about 1 minute. If it doesn't, add 1 tablespoon water and process until it does, adding another tablespoon of water if needed. Sprinkle a plate with the coconut and using a 1-tablespoon scoop, portion the mixture into balls, about 24, and drop onto the coconut. Roll in the coconut. Store in an airtight container with any excess coconut in the refrigerator for up to two weeks.

- In a small bowl, cream butter and brown sugar until light and fluffy. Beat in the egg, corn syrup, molasses and vanilla. Combine the oats, flour, cinnamon and baking soda; gradually add to creamed mixture and mix well. - Add the granola to a food processor and process until fine crumbs form.
- Add the melted coconut oil and pulse to combine.
- Grease a 9-inch (23 cm) pie dish with the solid coconut oil.
- Pour the granola mixture into the dish and press the crumbs firmly with the bottom of a measuring cup, making sure to cover the bottom and sides of the dish evenly. Place the pie dish into the refrigerator to firm up for an hour.
- Meanwhile, combine the strawberries, blackberries, raspberries, blueberries, sugar, ½ cup (120 ml) water, and the lemon juice in a medium saucepan. Cook for 4-5 minutes. or until the sugar is dissolved and the berries begin to release their juices, creating a loose, deep red mixture.
- In a small bowl, mix the cornstarch and remaining 3 tablespoons of water into a smooth paste. Add the cornstarch mixture to the berries and cook for another 2 minutes, until the filling thickens. Remove from the heat and let cool for 5 minutes.
- Remove the chilled pie crust from the refrigerator and pour in the berry compote. Spread the filling evenly.
- Chill the pie in the refrigerator for at least for 1 hour before serving.
- Garnish with fresh berries to your taste.

- Line work surface with cooking parchment paper. In medium microwavable bowl, microwave almond bark uncovered on High 30 seconds, stirring and heating in additional 15-second increments until almond bark can be stirred smooth.
- Remove granola bites from package. Using toothpick or fork, dip granola bite into melted almond bark, shaking off excess and placing on parchment paper. Repeat for remaining granola bites.
- Let stand 15 minutes to set; apply eyes and mouth with black decorating gel. Let stand an additional 10 minutes before serving.
