APPLE MUFFINS (VERY HEALTHY)

Apple Muffins (Very Healthy) image

This recipe is from the Liver Cleansing Diet by Dr Sandra Cabot. It is very healthy and tastes great. I don't add the sultanas because I don't like them and if I don't have almond oil or soy milk, I use canola oil and fat free milk and they still turn out great.

Provided by Tami W

Try this healthy alternative muffin recipe, topped with porridge oats for texture. Warm them up for an afternoon snack or on-the-go breakfast

Provided by Esther Clark

Time 40m

Number Of Ingredients 11

3 apples (Cox or Pippin work well) peeled and cubed
50ml rapeseed oil

150ml fat-free yogurt
3 tbsp light brown soft sugar
200g wholemeal self-raising flour
90g porridge oats
1½ tsp baking powder

  • Heat the oven to 180C/160C fan/gas 4. Line a muffin tray with 12 paper cases.
  • In a bowl whisk the oil, eggs, yogurt, sugar and apple purée. In a separate bowl, combine the flour, 70g of the oats, baking powder, bicarb, mixed spice, cinnamon and ¼ tsp salt. Make a well in the centre, then stir in the wet ingredients until you have a smooth batter, stir in the remaining chopped apple, then divide into the 12 cases. LOW-FAT APPLE SPICE MUFFINS

Low-Fat Apple Spice Muffins image

What I like the most about these muffins is that the spices make the muffin what it is. The raw cane sugar and whole wheat pastry flour are the best to use because they are the least processed ingredients available and retain more of their natural goodness. The chunky apple bits give me more for my bite and add another level of sweetness to the muffin. These make a great breakfast or brunch item, or you can have one with a cup of coffee and unwind! Enjoy!

SUPER HEALTHY APPLE MUFFINS

Super Healthy Apple Muffins image

This is a tasty little muffin I came up with last apple season! I modified an old recipe my Mom had to make it a bit more healthy, so I could really enjoy them without guilt!

Provided by EarlsWife

Categories     Quick Breads

Time 50m

Yield 24 muffins, 12 serving(s)

Number Of Ingredients 19

1 1/2 cups whole wheat flour
1/4 cup ground flax seeds
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 -2 tablespoon cinnamon (to taste)
1/8 teaspoon ground cloves
1/4 teaspoon salt
1 egg, beaten
1/2-3/4 cup nonfat milk (I use soy usually)
2 tablespoons honey
1 tablespoon molasses
1 1/2 teaspoons vanilla
1 tablespoon ground flax seeds
1 tablespoon nonfat yogurt
3 tablespoons applesauce, unsweetened
1 1/2 cups apples, grated
1/2 cup apple, coarsely chopped
9 dates, diced
1/2 cup pecans, coarsely chopped

Steps:

  • To grate apples I use my food processor, but you can use a hand grater if you want. I also usually send the dates through with the apples in the processor.
  • Then chop up your 1/2 cup of apples, nuts, and dates (if not thrown in processor with apples). The apples and nuts add to the texture and the dates make it a little sweeter.
  • Combine all items from the Dry list. Then all from the Wet list.
  • Slowly add Dry to wet and mix until combined well.
  • Pour batter in sprayed muffin tin (or use papers if you like) and place in 350°F oven about 12-15 minutes. Remove and place on cooling rack.

  • Preheat oven to 425 degrees Fahrenheit. If necessary, grease all 12 cups on your muffin tin with butter or non-stick cooking spray (my pan is non-stick and doesn’t require any grease).
  • In a large mixing bowl, combine the flour, baking powder, cinnamon, baking soda and salt. Blend well with a whisk. Add the grated apple (if it is dripping wet, gently squeeze it over the sink to release some extra moisture) and chopped apple. Stir to combine.
  • In a medium mixing bowl, combine the oil and maple syrup and beat together with a whisk. Add the eggs and beat well, then add the yogurt, applesauce and vanilla and mix well. (If the coconut oil solidifies in contact with cold ingredients, gently warm the mixture in the microwave in 30 second bursts.)
  • Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few lumps are ok). The batter will be thick, but don’t worry! Divide the batter evenly between the 12 muffin cups. Sprinkle the tops of the muffins with turbinado sugar. Bake muffins for 13 to 16 minutes, or until the muffins are golden on top and a toothpick inserted into a muffin comes out clean.
