Vietnamese Slow Cooker Pho image

Simple Slow Cooker Pho packed with chicken, shrimp and heat from jalapeños and Sriracha. Made in the slow cooker, and budget friendly too.

2 pounds chicken breasts ((skinless/boneless))
8 cups chicken stock
2 tablespoons brown sugar
2 tablespoons fish sauce
1 tablespoons tamari sauce
1 cinnamon stick
10 star anise
2 inch piece of fresh ginger ((peeled and sliced))
6 whole cloves
1 pound frozen cooked shrimp ((thawed/tail on))
4 cups baby bok choy ((chopped))
1/2 cup Thai basil ((roughly chopped))
2 jalapenos ((sliced))
1 lime ((quartered))
Sriracha sauce ((as needed))
12 ounces Pad Thai noodles ((pre cooked))
12 ounces Fresh bean sprouts ((raw or blanched))

Steps:

  • Place chicken breasts in slow cooker.
  • Combine stock, fish sauce, cinnamon, star anise, ginger, cloves, tamari, and brown sugar.
  • Pour over chicken breasts.
  • Cook on low for 9 hours.
  • Roughly chop bok choy.
  • Rinse and dry shrimp.
  • Remove chicken breasts from slow cooker along with the cinnamon stick, cloves, and star anise.
  • Add bok choy and shrimp to the slow cooker.
  • Replace lid, turn slow cooker to high and cook for 30 minutes.
  • At this point, you can blanch the bean sprouts in boiling water. If you are eating them raw, be sure to RINSE thoroughly.
  • Shred the cooked chicken breasts.
  • Return shredded chicken to pot and heat for a few minutes.
  • Place noodles in bowls, ladle broth, garnish with jalapenos, basil, Sriracha and bean sprouts.

1 onion, chopped
1 green chili pepper, seeded and chopped
3 slices ginger
2 star anise, whole
1 cinnamon stick
3 tablespoons tamari (or your favorite soy sauce)
6 cups vegetable broth
1 tablespoon peanut oil
4 ounces seitan, cut into strips, optional (I didn't use any)
3 tablespoons hoisin sauce
1 1/2 tablespoons lime juice
2 tablespoons barley miso (or regular miso(I used white miso)
2 tablespoons hot water
6 ounces rice noodles, soaked for 15 minutes in cold water and drained
1/2 cup bean sprouts, garnish
4 scallions, chopped, garnish
2 tablespoons cilantro, chopped, garnish

Steps:

  • In crock pot combine the first 7 ingredients (onion - broth), cover and cook on low for 6 hours.
  • Meanwhile, heat oil in skillet over medium high heat and add seitan strips. Brown on all sides. Remove from heat and set aside.
  • Strain broth/stock and return broth to crock pot.
  • In a small cup combine miso paste with water.
  • In a small bowl combine the next 2 ingredients and the miso/water mixture. Add to broth in crock pot. Stir in drained rice sticks and seitan. Cook for 5-10 minutes longer or until rice sticks are soft.
  • To serve, ladle soup into bowls and garnish with bean sprouts, scallions and cilantro.

1 head garlic, split horizontally
one 4-inch piece ginger, split in half horizontally
2 serrano chilies, split in half horizontally, plus 2-3 additional, thinly sliced, for serving
2 cinnamon sticks
4 star anise
2 1/2 teaspoons coriander seeds
7 cloves
1 tablespoon black peppercorns
2 teaspoons fennel seeds
5 cardamom pods
three pieces bone-in beef shank, cut into 2-inch rounds, about 5-6 pounds total
8 cups low sodium chicken broth
2 teaspoons salt or 2 teaspoons fish sauce, plus additional for serving
1 lb thin rice noodles, soaked in hot water until tender for 30 minutes
1 cup bean sprouts, for serving
lime wedge, for serving
mixed herbs, such as cilantro, Thai or italian basil, and mint, for serving
thinly sliced scallion, for serving

Steps:

  • Preheat broiler.
  • Place onion, garlic, ginger, and serrano chiles on a small baking sheet and broil, rotating until charred, about 8 minutes. Remove from broiler and add cinnamon, star anise, coriander, cloves, peppercorns, fennel, and cardamom. Return to broiler until spices are toasted and aromatic, about 30 seconds to a minute more. Transfer to crock pot, along with beef shanks and chicken stock. Add salt or fish sauce, and enough water to cover shanks by ½-inch, about 8 cups.
  • Place lid on crock pot and let cook, at least 8 hours and up to 12 for an even fuller flavor, until meat is falling off the bone.
  • Remove beef from crockpot. With a spider or mesh strainer, remove all aromatics from the pot. With a large spoon, skim fat. When beef is cool enough to handle, shred into bite-sized pieces and return to broth. For best results, chill broth and skim fat; reheat before serving. Alternatively, skim fat while soup is warm with a large spoon. Season to taste with salt or fish sauce.
  • Divide broth and meat among serving bowls and top with noodles, bean sprouts, lime wedges, herbs, scallions, and chiles. Serve.

10 lb mixed beef leg bones, shin, knuckle and marrow bones
12 oz ginger, 2 large hands, halved lengthwise
1 head large garlic, halved crosswise
4 kg medium yellow onion, halved lengthwise
8 sticks cinnamon
¼ cup whole black peppercorn
6 pods whole star anise
1 lb beef brisket
kosher salt
¼ cup fish sauce, plus more to taste
1 lb boneless sirloin steak
1 lb flat rice noodle, cooked according to package instructions
2 cups fresh mung bean sprouts
1 small red onion, very thinly sliced lengthwise
1 jalapeño, sliced into thin rounds
1 large bunch fresh thai basil
1 lime, cut into wedges
hoisin sauce
siracha

Steps:

  • Place the beef bones in a large stock pot, then add enough cold water to cover by 2 inches (5 cm). Bring the mixture to a boil over high heat and cook for 10 minutes to blanch the bones and remove any impurities.
  • Set a rack in the upper third of the oven and preheat the broiler.
  • Drain the bones in a colander and rinse under cold running water. Return the blanched bones to the stockpot.
  • Meanwhile, arrange the ginger, garlic, and onions cut-side up on a rimmed baking sheet and broil on high until the aromatics are deeply charred in spots, 5 minutes. Remove from the oven and add to the stockpot with the bones.
  • Meanwhile, combine the cinnamon sticks, peppercorns, and star anise in a medium skillet over medium-high heat and toast, shaking the pan occasionally, until the spices are darkened in spots and extremely fragrant, about 5 minutes. Add the toasted spices to the stockpot.
  • Season the brisket liberally with salt and add it to the stockpot.
  • Fill the pot with enough cold water to cover everything by 1 inch (2 cm). Bring to a boil over high heat, then reduce the heat to medium to maintain a gentle simmer, skimming off and discarding any fat that floats to the top as needed, until the brisket is fork-tender, 2-3 hours.
  • Using tongs, transfer the brisket to a plate and let cool completely. Refrigerate the brisket until ready to serve.
  • Continue to simmer the broth to get as much flavor out of the bones as possible, 3-4 hours more.
  • Using tongs, remove and discard the bones and aromatics. Slowly strain the broth through a fine mesh strainer set over a large pot. Skim and discard the fat from the broth, then stir in the fish sauce. Taste and add more as desired.
  • Thinly slice the brisket. Very thinly slice the raw sirloin steak against the grain.
  • Divide the noodles among 6-8 large bowls, then top with the brisket and raw steak. Ladle the hot broth over the noodles and meat and serve immediately with the bean sprouts, onion, jalapeño, Thai basil, lime wedges, hoisin sauce, and Sriracha alongside.
