PERFECT WACKY CAKE
This is Mom's favorite chocolate cake. Easy to make and has a little different twist. Also has no eggs or dairy products. Pick your favorite frosting for the top--Mom likes 7-minute the best.

Steps:
- Sift together and make 3 holes in dry ingredients.
- In first hole, pour vegetable oil.
- In second hole, pour vinegar.
- In third hole, pour vanilla.
- Pour cold water over all.
- Mix well with fork or whisk, but do not beat.
- Bake in greased 8 x 8 pan for about 35 minutes at 350 deg F.
WACKY CAKE FROSTING
Our Wacky Cake Frosting is a decadent, fudgy topping for any sheet cake, but it goes perfectly with our Wacky Cake recipe. This rich frosting is great topped with your favorite Southern nut, Pecans. You might even be reminded of a Texas Sheet Cake, but this frosting and the wacky cake it was developed for are much easier to make.

- Cook butter, milk, and cocoa in a small saucepan over medium-low, stirring often, until mixture comes to a simmer. Remove from heat; gradually whisk in powdered sugar and vanilla until completely smooth. Top your favorite cake recipe, like our Wacky Cake.
WACKY CAKE
Steps:
- Preheat 350 degrees F.
- Place the dry ingredients in a bowl. Make 3 small holes in the mixture. Pour the vanilla in one hole, the vinegar in another and vegetable oil in another. Pour water over the top and mix. Pour into a lightly greased 8 by 8 inch pan. Bake for 30 to 35 minutes.
WACKY LEMON CAKE WITH 7-MINUTE LEMON FROSTING
If you haven't heard of or made "wacky cake" before, don't let the strange combo of ingredients scare you away. Trust me, it will be one of the most moist and delicious cakes you'll ever have! Unlike traditional wacky cake, this recipe makes a wonderful and refreshing lemon cake rather than a chocolate cake. Personally, I think it's the perfect summer dessert!

Steps:
- Preheat oven to 350°.
- Make cake - sift dry ingredients together in 8 x 8 pan and make 3 holes.
- Pour vinegar in first hole, vegetable oil in second hole, and almond extract in third hole.
- Pour cold lemon juice and water over everything.
- Mix all ingredients thoroughly (do not beat).
- Bake in same 8 x 8 pan that ingredients were mixed in for 35 minutes or until center is firm.
- Cool completely.
- Make frosting - combine sugar, water, cream of tartar and salt in saucepan.
- Bring to boil, stirring until sugar dissolves.
- While beating constantly, very slowly add sugar syrup to egg white in mixing bowl.
- Continue beating until stiff peaks form (about 7 minutes).
- Beat in extracts.
- Smooth frosting over cooled wacky lemon cake.
- Enjoy!

WACKY CAKE & PEANUT BUTTER FROSTING
Steps:
- Mix dry ingredients in an ungreased cake pan. Stir together. Add all other ingredients and mix until well blended.
- Bake at 350°F for 25 minutes.
- Frosting: Cream together the Crisco and peanut butter. Start with small amounts like a half of a cup of Crisco & peanut butter. Add powdered sugar and milk. Mix ingredients for frosting until desired consistency and texture.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9 inch square pan.
- Sift together the flour, 1 cup of the sugar, 1/4 cup of the cocoa, the soda, and the salt. Stir in the vinegar, oil, water, and 1 teaspoon vanilla. Beat until smooth. Pour batter into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Let cake cool. Then spread chocolate icing over top.
- To Make Chocolate Icing: Combine 1 cup of the sugar, 1/4 cup of the cocoa, the milk, and the butter or margarine. Boil for 1 minute. Stir in 1 teaspoon vanilla and continue stirring until partially cool. Spread over cake.

WACKY CAKE AND 12 MINUTE ICING
This recipe comes from my grandma who I miss dearly. She used to make it all the time and then taught me how to make it. This is the most moist chocolate cake I have ever baked or eaten. I hope everyone who makes this recipe enjoys it as much as I do. The recipe calls to bake this cake 30 minutes but in some instances I have had to go as high as 45 minutes. The icing that is used is very good but you have to beat it for 12 minutes. The original recipe makes a small square cake but I double the recipe and use a 9 x 13 inch cake pan.

Steps:
- Sift together all the dry ingredients
- Add the water oil and vinegar and mix thoroughly. This can be done with a spoon or mixer. If you use a mixer you will achieve a denser cake.
- Bake in oven preheated to 350 degrees for approximately 30 minutes. Times will vary with ovens and elevations. Bake until fork inserted in center comes out clean.
- Icing: Cream together the butter, crisco and white sugar.
- Add in the flour one tablespoon at a time until incorporated.
- Add both the milk and vanilla mixing until incorporated. do this slowly or may splatter everywhere.
- Once ingredients are incorporated continue to mix on high for 12 minutes.
