VEGAN WACKY CAKE
This is my family recipe. It is a delicious chocolate cake with a twist, it's completely vegan. This cake goes great with some chocolate or vanilla frosting and a scoop of ice cream on top! I get extra fancy with a few mint leaves!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch round baking dish.
- Sift flour, sugar, cocoa powder, salt, and baking soda together in a bowl. Add water, oil, vinegar, and vanilla extract, to flour mixture and beat until smooth, about 1 minute. Pour batter into baking dish.
- Bake in preheated oven until toothpick inserted in center comes out clean, about 30 minutes. Cool on a wire rack for 1 hour before removing from baking dish.

Steps:
- Sift dry ingredients into an ungreased (8x8) pan. Make 3 holes in dry ingredients.
- In first hole, put 6 Tbsp oil.
- In second hole, put 1 tsp vanilla.
- In third hole, put 1 Tbsp vinegar.
- Pour 1 cup water over all and stir until smooth.
- Bake at 350 degrees for 35 minutes.
- Frost or sprinkle with confectioner's sugar.
- Can double recipe.

5-MINUTE WACKY VEGAN MICROWAVE CHOCOLATE CAKE FOR ONE
You absolutely will not believe how fast you can make the most decadent, moist, one-serving chocolate cake without eggs or milk. This is a variation of the famous wacky cake or crazy cake. It's sooo good! You stir all the ingredients and microwave it in a coffee cup. Try it. Seriously.

Steps:
- Stir together all the dry ingredients in a large coffee cup.
- Add wet ingredients and mix well with a fork.
- Microwave on 50% power for 3 minutes. (I think most microwaves are 1500 watts, so that's about the same as 750 watts for three minutes.) I always have my cup on the rotating plate. ENJOY!

- Position the rack in the center of the oven and preheat to 375°F. Lightly grease an 8-inch square pan.
