CLASSIC AMATRICIANA BUCATINI



Classic Amatriciana bucatini image

This southern Italian dish is made with just five ingredients - just use the best tomatoes and bacon you can find

2kg tomatoes - cherry, plum or ordinary - roughly chopped
250g smoked bacon , cut into strips, or cubetti di pancetta
2 small red chillies
500g bag bucatini
200g pecorino , grated

Steps:

  • Put the tomatoes into a food processor in batches and whizz to a fine pulp. Sieve into a large pan, in batches again, pressing through as much tomato as you can with a wooden spoon. Simmer for 20-30 mins until the sauce has reduced by a third to about 700ml. This homemade passata can now be frozen.
  • Put the bacon or pancetta into a cold, large, heavy-based frying pan. Place over a medium heat - the fat will slowly melt and the bacon will cook. Add the whole chillies (don't worry, they come out at the end) and cook for 8-10 mins with the bacon until the bacon is sizzling and golden all over. Stir in the tomato sauce, bring to the boil and simmer for 4-5 mins.
  • Meanwhile, cook the pasta, then drain well. While still hot, tip it into the sauce, sprinkle with most of the cheese and stir well. Remove the whole chillies, dish the pasta onto plates and sprinkle with the remaining cheese.

This pasta dish is my signature dish. I really enjoy making this pasta, especially with the right ingredients like guanciale. Top with freshly grated Parmesan cheese.

5 ounces bucatini pasta
¼ cup extra-virgin olive oil
3 crushed garlic cloves
1 ½ ounces guanciale (cured pork cheek), sliced
¼ cup sliced red onion
1 pinch red pepper flakes
½ (8 ounce) can crushed San Marzano tomatoes
salt and ground black pepper to taste
1 ounce freshly grated Pecorino Romano cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in bucatini and return to a boil. Cook, uncovered, stirring occasionally, until bucatini is tender, about 11 minutes. Drain.
  • Heat oil in a large skillet over medium-high heat. Add garlic cloves; cook until golden brown, about 1 minute. Remove with a slotted spoon and discard. Add guanciale; cook and stir until crisp and golden, about 4 minutes. Add onion and red pepper flakes; cook and stir until onion is translucent, about 3 minutes. Stir in tomatoes, salt, and black pepper. Simmer tomato sauce until flavors combine, about 10 minutes.
  • Stir bucatini and Pecorino Romano cheese into tomato sauce and toss until evenly coated.

So often the simplest dishes are the best here asparagus elevates everyday pasta into something rather sublime. If you re vegetarian, just leave out the anchovies and perhaps add a little grated cheese

130 g fresh sourdough, crusts removed
450 g asparagus, trimmed
125 ml extra virgin olive oil
3 tbsp nonpareille capers, rinsed and drained
350 g Waitrose 1 bucatini spaghetti
1 large garlic clove, roughly chopped
1 large lemon, zest and juice
¼ tsp dried chilli flakes
10 anchovy fillets in olive oil, drained
25 g pack flat leaf parsley, roughly chopped

Steps:

  • Roughly tear up the sourdough and put in the small bowl of a food processor. Whizz to breadcrumbs and set aside. Slice each asparagus spear on a steep diagonal into pieces about 3-4cm long; set aside.
  • Heat 2 tbsp oil in a frying pan. Pat the capers dry; add to the pan. Cook over a medium heat for 2-4 minutes, turning occasionally, until starting to crisp. Scoop out with a slotted spoon; drain on kitchen paper, leaving the oil in the pan. Add the breadcrumbs to the pan and stir over the heat until golden brown (4-6 minutes); set aside to cool and crisp up.
  • Meanwhile, cook the pasta following pack instructions, adding the asparagus pieces for the final 3 minutes. Put the garlic in a pestle and mortar with the lemon zest, chilli and anchovies. Pound into a smooth paste, then stir in the lemon juice and remaining oil. Drain the pasta and return to the pan. Toss with the anchovy paste, capers and parsley; season if liked. Divide between bowls, scattering with the breadcrumbs to serve.

1 (16 ounce) package bucatini pasta
1 tablespoon extra-virgin olive oil
10 ounces guanciale (cured pork cheek), cut into strips
4 tablespoons finely grated Pecorino Romano cheese, or more to taste
freshly ground black pepper to taste

Steps:

  • Bring a large pot of very lightly salted water to a boil. Cook bucatini in the boiling water, stirring occasionally, until almost tender yet still pretty firm to the bite, 8 to 10 minutes.
  • Meanwhile, heat oil in a large nonstick skillet over low heat. Add guanciale and cook slowly until it has rendered all its fat and is crispy on the outside and soft on the inside, 8 to 10 minutes.
  • Drain bucatini and reserve cooking water.
  • Transfer bucatini to the skillet with the guanciale and finish cooking the pasta in the pan juices, adding a little pasta water at a time until pasta has the right consistency. Stir in Pecorino Romano cheese and season with black pepper. Serve immediately.
