I came up with this recipe when I promised to bring a potato salad to a picnic but had no regular potatoes on hand. The sweet potatoes were there, so I revised my regular potato salad recipe and a new dish was born! Adding the apples was an inspired touch, and the dish was a hit.-Lois Jeffery, Chesterland, Ohio

1 small sweet potato
1 medium apple, cubed
1/4 cup chopped celery
2 tablespoons chopped walnuts
2 tablespoons golden raisins
2 tablespoons miniature marshmallows
2 tablespoons mayonnaise
2 tablespoons sour cream
1/2 teaspoon lemon juice
Leaf lettuce, optional

Steps:

  • Place sweet potato in a small saucepan; add water to cover. Bring to a boil. Reduce heat; cook, covered, until just tender, about 20 minutes. Drain and cool completely. , Peel potato and cube; combine with next five ingredients. In another bowl, combine mayonnaise, sour cream and lemon juice; pour over salad, and gently toss. Refrigerate, covered, at least 1 hour. If desired, serve on lettuce.

I couldn't ever find the perfect Waldorf salad - one that wasn't too mayonaise-y tasting, yet one that still held enough of the original flavor to be called a Waldorf. So I mixed and matched and experimented, and finally came up with a perfect twist on the classic Waldorf Salad recipe. Now I get requests for it at every family get together!

2 Granny Smith apples, cored and diced
1 Red Delicious apple, cored and diced
1 Asian pear, cored and cubed
1 stalk celery, diced
½ cup sliced almonds
1 cup golden raisins
1 cup seedless green grapes, halved
1 ½ cups sweetened dried cranberries
1 ¼ cups plain yogurt
¼ cup white sugar
⅓ cup brown sugar
¾ cup mayonnaise
3 tablespoons lemon juice
½ teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the Granny Smith apples, Red Delicious apple, Asian pear, celery, almonds, golden raisins, grapes and cranberries. In a separate bowl, stir together the yogurt, white sugar, brown sugar, mayonnaise, lemon juice and cinnamon. Pour the dressing over the fruit mixture and stir gently until evenly coated.

1/3 cup walnuts
3 cups sweet potatoes, peeled and grated
1 red apple, chopped (unpeeled, cored and coarsely chopped)
1/2 cup celery, chopped
1/2 cup red seedless grapes, halved
1/3 cup blue cheese, crumbled (optional)
3 tablespoons apple juice
2 tablespoons vegetable oil
1 tablespoon white wine vinegar
1 teaspoon white wine vinegar
1 teaspoon sugar
1/2 teaspoon salt

Steps:

  • Toast walnuts in oven at 350 degrees until golden, about 10 minutes. Cool. Place walnuts, sweet potatoes, apple celery, grapes and blue cheese (if desired) in a large bowl.
  • To make dressing, whisk apple juice, oil, vinegar, sugar and salt until blended. Pour over salad and toss well. Serve on a platter lined with red leaf lettuce.

2/3 cup mayonnaise
1 1/2 cup sour cream
1 orange, zest of
1 tablespoon chopped crystallized ginger (see Note)
salt and pepper, to taste
Salad
2 pounds sweet potatoes, peeled and cut into 1/2-inch dice
3 stalks celery, thinly sliced (about 1/8 inch) on a slight bias
1 cup toasted walnut halves
1 can (14 ounce size) crushed pineapple
1/2 cup golden raisins
1/2 cup chopped dried apricots

Steps:

  • For Dressing: In a bowl, combine mayonnaise, sour cream, orange zest, crystallized ginger, salt and pepper. Dressing may be made up to several hours in advance and kept in a covered container in the refrigerator. For Salad: Place diced sweet potatoes in a large pot and add enough water to cover by 2 inches. Bring to a boil and immediately reduce heat to medium. Cook 5 to 10 minutes until potatoes are just fork-tender (be careful not to overcook potatoes, or they will become mushy when you make the salad). Drain sweet potatoes thoroughly, then chill them in a covered container in the refrigerator for at least an hour. Just before serving, in a large bowl, combine sweet potatoes, celery, walnuts, pineapple, raisins and apricots. Add dressing and toss gently, trying to avoid breaking up the sweet potatoes. NOTE: Crystallized ginger is usually found in either the spice section or the baking section of the supermarket.

1/2 cup coconut flakes
3/4 cup miniature marshmallow
1/2 cup pineapple chunk, chopped small
1 tablespoon honey
1 -2 cup fat-free whipped topping (or prepared whipped cream)

Steps:

  • Place lemon juice in large bowl.
  • Remove cores from apples and discard.
  • Chop apples and coat in lemon juice to prevent oxidation.
  • Stir in raisins, pecans, and coconut.
  • Drizzle honey over mixture and blend well.
  • Add marshmallows and stir.
  • Fold in whipped topping, and chill.
