- Line a rimmed baking sheet with foil. (Take care to avoid wrinkles.) Combine melted chocolate and nuts in a medium bowl. Scrape the mixture onto the foil and spread it into an approximate 12-by-9-inch rectangle. Sprinkle with additional finely chopped nuts, if desired. Refrigerate until set, about 20 minutes.
- Transfer the bark and foil to a cutting board. Use a sharp knife to cut into 1 1/2-inch pieces.

CHOCOLATE MIXED NUT CLUSTERS
Steps:
- Make a double boiler for melting the chocolate by taking a saucepan and bringing 2 quarts of water to a boil, reduce to a simmer. Place a glass bowl of the same size or slightly smaller inside the simmering water. No water should be in the bowl- it just sits on top of the boiling water.
- Place the milk chocolate chips and the baking chocolate inside the waterless pot and stir until melted.Add in the 2 cups of mixed nuts and stir until completely coated.
- NOTE: If your stove has a "Melt" setting- skip the double broiler and just add chocolate to a medium sized saucepan instead. (NO WATER NEEDED!)
- Scoop the chocolate nut mixture using medium sized spoons onto parchment lined cookie sheets. Place the cookie sheets inside of your fridge until the chocolate has set. Enjoy!
- Place all of the chocolate in a medium sized glass or ceramic bowl. Microwave on high for 1 minute 30 seconds. Let sit 3-4 minutes, in the microwave. Stir gently. Add time in 30 second intervals, letting chocolate sit for 2-3 minutes after each warming segment before stirring. Once chocolate is completely melted, add in the 2 cups of mixed nuts and stir until completely coated.Scoop the chocolate nut mixture using medium sized spoons onto parchment lined cookie sheets.Place the cookie sheets inside of your fridge until the chocolate has set. Enjoy!

- Heat oven to 350°F.
- Cook caramels and 1/3 cup milk in saucepan on low heat 5 to 7 min. or until caramels are completely melted and mixture is well blended, stirring frequently. Remove from heat.
- Combine cake mix, butter and remaining milk; press half onto bottom of 13x9-inch pan sprayed with cooking spray. Bake 10 min.
- Sprinkle with 1 cup nuts and 1/2 cup chopped chocolate. Drizzle with caramel sauce; carefully spread to edges of pan. Top with teaspoonfuls of the remaining cake mix mixture; press gently into caramel sauce with back of spoon. Sprinkle with remaining nuts and chocolate.
- Bake 18 min. or until lightly browned. Cool completely before cutting into bars.

- Place chips and shortening in medium microwave safe bowl and microwave on high or 1 to 1 1/2 minutes or until smooth when stirred.
- Stir in nuts.

I'm gravitating towards the Paleo Diet so I created this high-protein and energy snack recipe out of a desire to eliminate those expensive and so-called nutritious protein bars. I don't want all of the processed carbs that are hidden in them because, quite honestly, they aren't that healthy. These are really tasty and my whole family loves them. I recommend making them fairly small and bite-sized, as they can crumble a little as you're biting into them. Freezing or refrigerating them keeps the messiness down, but they won't spoil if left at room temperature. I eat 4 or 5 with a big glass of water and feel full!

- Place teff in a large skillet over medium heat and toast until fragrant, 3 to 5 minutes. Transfer to a large bowl. Stir in coconut, chia seeds, and milled flax seed.
- Chop walnuts, almonds, chocolate chips, dates, cranberries, and pumpkin seeds in a food processor, in batches if necessary, until finely chopped and the consistency of coarse breadcrumbs.
