ZINGY GREEN TOMATO SALSA



Zingy Green Tomato Salsa image

When the end of the gardening season comes and you have unripe green tomatoes, make this zingy green tomato salsa.

Time 45m

Number Of Ingredients 10

3 pounds chopped green tomatoes
3 small onions, chopped
4 small sweet peppers, chopped
3-5 hot peppers, finely chopped (remove seeds for a milder salsa)
4 cloves garlic, minced
4 Tbsp. fresh parsley or cilantro
2 tsp. dill or cumin seed
2 tsp. salt
1 cup apple cider vinegar
1 cup water

Steps:

  • Before you get started with chopping all ingredients, be sure to wash and sterilize your canning jars. Also prepare your water bath canner for the filled jars.
  • Combine chopped tomatoes, peppers, onion, garlic and apple cider vinegar in a stock pot and bring to a boil. Then add the rest of the ingredients. Chop vegetables as finely, or as chunky, as you like your salsa.
  • Simmer for 15 minutes, then ladle hot salsa into jars, leaving 1/2 inch headspace. Let out as many air bubbles as possible and put the lids on each jar.
  • Process jars in a water bath canner for 20 minutes, making sure to adjust for altitude.
  • Remove jars with a jar lifter and allow them to slowly come to room temperature. Make sure that all lids have sealed.

Fresh salsa - it's easy to make, and is so light, zingy, & absolutely delicious! It's sure to become a staple in your summer menu plan!

3-4 large ripe tomatoes (about 3 cups worth) (finely chopped)
1-2 cloves garlic, minced
1 lime zest & juice
1-2 jalapeños, finely minced (add the seeds for extra heat!)
1/2 small red onion (finely chopped)
1-2 bunches fresh, green coriander seed (see above pictures)
1 tsp cumin seed, ground in mortar & pestle, or 1 tsp ground cumin. (Toasting it first adds lovely flavor!)
1 pinch cayenne pepper
1 bunch cilantro, minced
1 tsp salt (or to taste)
fresh ground pepper
1-2 pinches sugar

Steps:

  • Do all of your chopping, mincing, & zesting, then combine the ingredients in a medium bowl.
  • If you can resist the urge to eat it immediately, this salsa is even more delicious if given time to rest so the flavors increase and meld. Cover and put in the fridge for 30 minutes or longer.
  • Serve with taco chips!

¼ cup chopped red onion
¼ cup chopped yellow onion
2 tablespoons canned green chilies
2 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
2 cloves garlic, peeled
1 teaspoon ground cumin
¼ teaspoon salt

Steps:

  • Combine tomatoes, red onion, yellow onion, green chilies, lime juice, cilantro, garlic, cumin, and salt in a food processor. Pulse processor until mixture is combined, yet remains chunky. Transfer to a bowl, cover with plastic wrap, and refrigerate at least 1 hour.

This recipe is bursting with flavor! It is fresh and spicy, and did I mention easy? This is the closest thing to restaurant style salsa you will find. The jalapenos and hot pepper sauce (e.g., Tabasco) add spice to the mix and the cilantro, lime juice, and green onions create freshness.

5 roma (plum) tomatoes, seeded and chopped
10 green onions
2 fresh jalapeno peppers, seeded
¼ cup chopped fresh cilantro
2 tablespoons fresh lime juice
2 tablespoons hot pepper sauce
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon salt

Steps:

  • In a blender or food processor, pulse the tomatoes, green onions, jalapeno peppers, and cilantro to desired consistency. Transfer to a bowl, and mix in the lime juice, hot pepper sauce, black pepper, garlic powder, and salt.
