SAVOURY CHEESE & WALNUT SABLES FOR COCKTAILS AND PARTIES!
These delicious crisp and light little savoury biscuits/crackers are a firm favourite in our family, especially when served with the cheese board! They are also great served with soups, dips, & salads. I have used pecans instead of walnuts in the past with the same tasty results. You can omit the chilli or cayenne pepper if you are not keen on the spicy "kick" it gives! They are very nice at Christmas time if you cut them into star shapes & serve them as aperitif snacks, or with cocktails.

Steps:
- Sift the flours, salt, pepper & chillies into a bowl together & mix.
- Rub in the butter until it resembles breadcrumbs.
- Add the cheese & walnuts - mix well.
- Add the beer or milk - mix into a dough.
- Chill for 30 minutes.
- Roll out on a floured board and cut into small rounds.
- Place on a greased baking (cookie) tray and bake in pre-heated oven 180C/360F for about 15 minutes or until golden brown & crisp.
- Sprinkle with seasoning salt or Cayenne pepper if you wish.
- Cool on a wire rack and store in airtight tins.
- Serve with cheese, cream cheese & savoury fillings & dips, or just by themselves!
PEANUT BUTTER BON-BONS
These bon-bons are like little crispy chocolate candy bars. Add a little bit of paraffin to your chocolate to make it shinier if you wish.

- In a medium saucepan, melt together the peanut butter and butter, stirring occasionally until warm and smooth. In a large bowl, stir together the confectioners' sugar and rice cereal; pour the peanut butter mixture over the cereal mixture and use your hands to blend well. Roll tablespoonfuls of the mixture into balls and chill.
- In the microwave or in a metal bowl over a pan of simmering water, melt chocolate chips, stirring frequently until smooth. Dip the peanut butter balls into the chocolate using a toothpick. Place onto waxed paper to set.

BONBONS
This recipe was made by my mother only around Christmas time. Now, I carry on the tradition of this sweet confection.

- In large bowl, combine margarine, confectioners' sugar, condensed milk, coconut, chopped walnuts and vanilla. Stir well. Cover and chill in the refrigerator for 2 hours, or until mixture has thickened enough to roll into balls. Roll the mixture into 1-inch balls and place close together, but not touching, on cookie sheets. Freeze until hard.
- While bonbons are freezing, line a cookie sheet or flat surface with waxed paper. Combine chocolate chips and shortening in the top of a double boiler, over, not in, simmering water. Stir until melted. Using a toothpick or a fork, dip each bonbon in the melted chocolate. Place on waxed paper to dry. When chocolate has hardened, store bonbons in plastic bag in the freezer.

WALNUT BLUE CHEESE COINS
These crackers are very rich, yet still quite light and crispy. They pair well with soup.

- In the bowl of a food processor, finely grind 1/2 cup walnuts. Add flour, salt, pepper, and baking soda; pulse to combine. Add butter; pulse until mixture resembles coarse meal. Add cheese; pulse until dough comes together, about 15 seconds.
- Preheat oven to 350 degrees. Transfer dough to lightly floured surface; divide into two equal parts. Using your hands, roll dough into two 1 1/2-inch-diameter logs. Coarsely chop remaining 1/2 cup walnuts; sprinkle over a clean work surface. Roll logs in walnuts. Wrap each log in plastic wrap, and chill until firm, at least 3 hours.
- Slice logs into 1/4-inch-thick coins. Transfer to ungreased baking sheet; sprinkle lightly with coarse salt. Bake until centers are firm to the touch, about 15 minutes. Transfer to a wire rack to cool. Store in an airtight container, at room temperature, 3 to 4 days.
CREAM CHEESE BONBONS
These pretty coconut-speckled candies are rolled in grated chocolate, but you could also coat them in finely chopped nuts, chocolate sprinkles or jimmies. Beverly Coyde of Gasport, New York substitutes almond extract for the vanilla and chopped toasted almonds for the contest.
