1 cup granulated sugar
1 ½ teaspoons ground cinnamon
1 tablespoon vanilla extract
½ teaspoon salt
4 cups walnut halves

Steps:

  • Preheat oven to 200 degrees F (95 degrees C). Prepare a jelly roll pan with cooking spray.
  • Beat egg white and sugar together in a large bowl.
  • Mix cinnamon, vanilla extract, and salt together in a small bowl; stir into the egg mixture. Fold walnuts into the mixture to coat; spread onto prepared jelly roll pan.
  • Bake in preheated oven until the coating on the nuts is crusty, about 1 hour 15 minutes. Cool nuts 5 minutes before serving.

Who wouldn't love these ooey-gooey rolls from Jill Defries of Windom, Minnesota? They're fast to assemble using frozen bread dough, and they get their great flavor from cinnamon, brown sugar and chopped walnuts.

1 loaf (1 pound) frozen bread dough, thawed
2 tablespoons butter, melted
2/3 cup packed brown sugar
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
1/2 cup heavy whipping cream
2/3 cup confectioners' sugar
1 tablespoon whole milk

Steps:

  • Roll dough into a 20x6-in. rectangle. Brush with butter. Combine the brown sugar, walnuts and cinnamon; sprinkle over dough. Roll up jelly-roll style, starting with a long side. Cut into 20 slices, 1 in. thick. Place in a greased 13x9-in. baking pan. Cover and let rise in a warm place until doubled, about 45 minutes., Drizzle with cream. Bake at 350° for 25-30 minutes or until golden brown. Invert onto a serving platter. In a small bowl, combine the confectioners' sugar and milk; drizzle over rolls. Serve warm.

Steps:

  • Creating the Gift in a Jar:
  • Wash and thoroughly dry a 1-quart wide-mouth canning jar.
  • Layer the ingredients in the jar as listed above starting with the powdered sugar, flour, walnuts, salt and then cinnamon - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.
  • Secure the lid and decorate as desired; attach the instructions for making these cookies found below.

This is an old, old recipe that has been in the family for years. The origin is unknown. Recipe uses very little sugar in it and is rolled in superfine sugar to sweeten.

½ cup butter, softened
1 ⅛ cups all-purpose flour
1 cup chopped walnuts
⅛ teaspoon salt
1 teaspoon vanilla extract
2 tablespoons white sugar
½ cup super fine sugar

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Cream the sugar and butter. Add flour, nuts, salt and vanilla. Mix well. Batter will be very crumbly.
  • Shape into 1 inch balls. Bake for 15 minutes, remove from oven and allow to cool for 3 minutes. Roll in super fine sugar. When cool, roll again, if desired.

This is posted in response to a request and I have not yet made these cookies. The recipe comes from the "Gifts For The Cookie Jar" cookbook and describes these as light and delicate with cinnamon flavor. Times are guesstimates for assembling the jar mix ingredients.

3/4 cup powdered sugar
3 cups flour
1 cup finely chopped or ground toasted walnuts
1/4 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups butter, softened
1 teaspoon vanilla
1/2 cup powdered sugar

Steps:

  • *Mix instructions*.
  • In large bowl, combine all ingredients, stirring until thoroughly mixed.
  • Fill 1 quart jar with mixture, packing down as necessary to fit into jar.
  • Place lid on jar.

  • Preheat oven to 325°F.
  • Place butter and vanilla in large bowl and beat on low speed.
  • Add jar contents, a little at a time, beating after each addition.

  • Cool for 1 minute and transfer to cooling rack.
  • Cool for additional 10 minutes and roll in powdered sugar to coat.
