WALNUT HONEY BARS
One of my husbands favorite desserts thats full of energy. Very good for Suhoor or for Iftar. Also good anytime as a breakfast bar or snack.

Steps:
- Preheat oven to 375 F.
- Lightly Grease pan.
- Put the flour, confectioners sugar and butter in food processor and process until the mixture forms crumbs.
- Using the pulse button, add 1-2 tablesppons water- enough to make a firm dough.
- Push the dough into the greased pan so it makes an even layer.
- Sprinkle the walnuts over the base.
- Whisk remianing ingredients together.
- Pour over the walnuts and bake for 25 mins.

- In a small bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine flour and salt; gradually add to creamed mixture and mix well. , Press onto the bottom of a greased 13-in. x 9-in. baking pan. Bake at 350° for 20 minutes or until edges are lightly browned., For filling, in a small bowl, combine the eggs, brown sugar, flour, vanilla, salt and baking powder. Stir in walnuts. Spread over crust. , Bake for 25 minutes or until filling is golden brown. Cool on a wire rack., Combine confectioners' sugar and enough lemon juice to achieve desired consistency; spread over filling. Let stand until set before cutting.

ORGANIC GRANOLA, NUT, HONEY, AND CHOCOLATE CAKE BARS
Almost a dessert but not quite and loaded with nutrients and protein. Use organic honey, butter, etc. and you have an amazing natural treat. My favorite is to heat in a bowl and add milk like a super decadent pudding cake.

- Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with parchment paper and grease.
- Place 3/4 cup oats in a blender; blend to make oat flour. Combine oat flour, remaining oats, nuts, chocolate chips, peanut butter chips, sugar, cinnamon, and salt in a bowl.
- Mix honey, peanut butter, butter, water, and olive oil together in a separate bowl; stir into oat mixture until well coated. Press firmly across the baking sheet and into the corners.
- Bake in the preheated oven until top is golden brown, about 30 minutes. Cool to room temperature before cutting into bars.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. In a small bowl, whisk flour, oats and salt; gradually add to creamed mixture, mixing well. Press onto bottom and 1/2 in. up sides of an ungreased 13x9-in. baking pan. Bake until edges begin to brown, 16-20 minutes. Cool on a wire rack., For filling, in a large saucepan, combine honey, apple jelly and butter over medium heat; stir until jelly and butter are melted. Remove from heat; whisk in brown sugar, eggs and vanilla. In a small bowl, whisk flour, baking powder, salt and cinnamon; whisk into honey mixture. Fold in walnuts and dates. Pour over crust; spread evenly. Bake until golden brown, 24-28 minutes. Cool completely in pan on a wire rack. Cut into bars.
