1 tablespoon soy sauce
1 teaspoon garlic powder
1 teaspoon cumin

  • Pulse until course and crumbly. Don't pulse for too long, or else you'll end up with butter!

Walnuts, pulsed in a food processor with a Mexican-inspired combination of spices, form the protein base of these easy-to-assemble tacos.

2 cups coarsely chopped raw walnuts
2 tablespoons fresh lime juice
1 tablespoon finely chopped fresh cilantro
1 tablespoon water
1 1/2 teaspoons ground cumin
1 teaspoon chili powder
1/4 teaspoon chipotle chile powder (may substitute ground cayenne pepper)
1/2 teaspoon fine salt, or more as needed
1/4 teaspoon freshly ground black pepper
Twelve 6-inch corn tortillas, warmed
1 cup chopped fresh tomato
1 cup thinly sliced red cabbage
Flesh of 2 medium avocados, sliced
1/2 cup store-bought or homemade salsa verde (see related recipe)
1/2 cup Greek-style yogurt (may substitute nondairy yogurt or nondairy sour cream)
12 cilantro sprigs
2 limes, cut into wedges

Steps:

  • 1 Make the filling: In a food processor, combine the walnuts, lime juice, cilantro, water, cumin, chili powders, salt and black pepper and pulse until the nuts are reduced to pebble-size, about 1 minute; do not over-process
  • 2 Taste, and season with more salt, if desired
  • 3 Assemble the tacos: Divide the corn tortillas among serving plates
  • 4 Spoon about 2 tablespoons of the filling on each tortilla, then add some tomato, a few slivers of cabbage, a couple slices of avocado, a spoonful of salsa verde, a dollop of yogurt and some cilantro
  • 5 Serve with lime wedges on the side, for squeezing

1 ¼ cups all-purpose flour
½ cup white sugar
½ cup packed brown sugar
¼ teaspoon baking soda
1 egg
1 teaspoon vanilla extract
½ cup butter, softened
¾ cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a medium bowl, stir together the flour, white sugar, brown sugar, and baking soda. Add the egg, vanilla, and butter; mix until dough forms. Stir in the chopped walnuts. Roll dough into 1 inch balls and place 2 inches apart onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, until the edges are golden brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

This is a recipe I learned at a vegetarian cooking class. It was presented to us as what a person who is on a Raw diet would eat. It's very good and not what I had expected. Recipe courtesy of the instructor Rob McLean. Serving size is dependant on how much filling you use.

2 cups walnuts
soy sauce, to taste
ground cumin, to taste
2 tomatoes, chopped
2 tablespoons cilantro, chopped
1 green onion, chopped
1 garlic clove, finely minced
1 lemon, juice of
pepper
10 -12 leaves collard greens, cleaned and trimmed of large stalks

Steps:

  • In food processor, place walnuts and blend until finely chopped, but not into powder.
  • Add in the seasonings to your taste.
  • In a bowl, combine all other ingredients except greens.
  • Place a collard leaf on a surface and crack the ribs remaining to flatten.
  • Place an amount of the walnut mixture on top along with desired amount of tomato mixture.
  • Roll up and enjoy.
