WARM BACON POTATO SALAD

1/2 cup white wine vinegar
1 tablespoon coarse-grained mustard
1 tablespoon sugar
2 1/2 pounds red potatoes, diced into 1-inch cubes
Salt
6 bacon slices, chopped
1 medium sized red onion, diced
Freshly ground black pepper
2 cloves garlic, chopped
1/4 cup freshly chopped dill leaves, plus more for garnish
Vinaigrette:

Steps:

  • For the vinaigrette:
  • Mix all the ingredients together in a small bowl and set aside.
  • Add potatoes to pot of salted cold water. Bring to a boil, over high heat, then reduce heat to a simmer and cook for 20 minutes until tender. Drain and place in a large bowl. Cover with foil to keep warm, if necessary.
  • Add bacon to large saute pan and cook until crisp over medium heat. Remove to a paper towel-lined sheet tray and reserve. Add onion, dash of pepper and garlic to bacon grease and saute until tender, about 3 minutes. Add vinaigrette to vegetables. Let cook until reduced and thickened, about 2 to 3 minutes.
  • Add potatoes, dill and bacon to the pan and toss to coat with dressing. Allow to cook for 3 minutes. Season, to taste, with salt and pepper. Transfer potato salad to a serving platter and sprinkle with chopped fresh dill.

This warm broad bean and bacon salad recipe is great served with hunks of fresh crusty white bread. Don't know how to prepare broad beans? First, pod the beans from their velvet-lined, green and long pod. You usually get around 5 or 6 usable beans in each pod, and at this stage, they can look quite greyish in colour. Then, follow step 1 below - this technique is often known as 'double-podding', and while fiddly, is well worth the effort for the incredibly tender, bright green beans you'll find.

500g podded broad beans
150g rindless, smoked, dry cured streaky bacon
3 tbsp extra-virgin olive oil, plus 1 tsp and extra to serve
1 fat garlic clove, finely chopped
50g (1-2) shallots, finely chopped
1 tbsp lemon juice
2 tbsp coarsely chopped fresh flatleaf parsley or mint
Sea salt flakes

Steps:

  • Drop the beans into a pan of well-salted boiling water and cook for 5 minutes or until just tender. Drain and, when cool enough to handle, nick the skin of each one with your fingernail and pop out the bright green beans.
  • Cut the bacon rashers crossways into thin strips (about 2cm). Heat the 1 tsp of oil in a large frying pan, add the bacon and stir-fry over a high heat for about 3 minutes until crisp and golden. Tip onto a plate lined with kitchen paper and set aside.
  • Add the 3 tbsp oil and the garlic to the pan and put over a medium heat. As soon as the garlic is sizzling (but not browned), turn down the heat, add the shallots, then soften for 3-4 minutes. Stir in the beans. Stir for 2 minutes until warmed through.
  • Remove the pan from the heat and stir in the lemon juice, most of the crisp bacon, the parsley or mint and some seasoning to taste. Spoon onto a serving plate, drizzle over a little more oil, then scatter over the remaining crisp bacon and a few sea salt flakes and serve.

2 pounds red potatoes, cut into bite-size pieces
1 serving olive oil cooking spray
½ pound frozen French-style green beans, thawed
1 cup chopped red onion
4 cloves minced garlic
½ cup reduced-fat balsamic vinaigrette dressing
1 cup jarred roasted red peppers, drained and chopped
¼ cup chopped fresh basil
1 (8 ounce) package goat cheese, crumbled

Steps:

  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, 8 to 10 minutes. Drain and allow to steam dry for a minute or two. Place potatoes in a large bowl.
  • Heat a large skillet over medium-high heat; grease with cooking spray. Cook and stir the green beans and onion until tender, about 5 minutes. Stir in the garlic; cook and stir until garlic is fragrant, about 1 minute more.
  • Transfer the green bean mixture into the large bowl with the potatoes. Add the balsamic vinaigrette, roasted red peppers, and basil; toss lightly. Stir in the goat cheese.

SALAD OF NEW POTATOES WITH PANCETTA, BROAD BEANS & MINT

500g small new potato
140g fresh broad bean , or frozen
140g fresh pea
5 tbsp extra-virgin olive oil
80g packet sliced pancetta
4 heaped tbsp mint leaves, stalks removed
25g bunch flat leaf parsley , leaves removed
juice 1 lemon

Steps:

  • Cook the potatoes in their skins in a pan of boiling salted water. They will take between 10-12 minutes and should be tender when the point of a knife is inserted. Drain the potatoes and allow to cool.
  • Meanwhile, place the broad beans in a large pan of boiling salted water. Cook for 3-4 minutes then tip in the peas. Boil for another 2-3 minutes until both the peas and broad beans are tender but still have some texture. Now drain and refresh in icy cold water. Remove the outer skins of the broad beans and discard, if you have the time.
  • Heat 1 tablespoon of the extra virgin olive oil in a heavy-based saucepan and fry the pancetta until really crispy. Then tip the pancetta with its oil into a large bowl. When the potatoes are cool enough to handle, cut them in half lengthways and add to the bowl. Mix well so that the warm potatoes can absorb some of the delicious pancetta flavours.
  • In a small food processor or with a hand blender, blend the herb leaves with two tablespoons of the extra virgin olive oil. Then add the lemon juice and whisk in the remaining oil to form an emulsion. Season well with salt and black pepper.
  • Now throw the peas and the peeled broad beans into the bowl, pour over the dressing and gently mix together. Check the seasoning and serve immediately.

This homemade salad is so much better than shop-bought

200g broad beans , fresh and podded, or frozen
750g salad or new potato (I used Charlotte)
1 red onion , very thinly sliced
2 tbsp white wine vinegar
½ tsp sugar
150ml pot soured cream
bunch chives , snipped
½ tsp Dijon mustard

Steps:

  • Heat a pan of salted water; once boiling, add the broad beans. Bring the pan back to the boil for 2 mins, then lift the beans out with a slotted spoon into a bowl of cold water. Tip the potatoes into the pan, then boil for 15-20 mins or until tender. Drain and leave to cool. While the potatoes are cooking, put the onion into a shallow bowl, splash with the vinegar and scatter over the sugar, then leave to soak. Pop the beans out of their jackets.
  • For the dressing, mix the soured cream, chives, mustard, 1 tbsp water and plenty of seasoning, measure 2 tsp of the vinegary juices from the onion, then stir to combine. Taste and add more of the vinegar if you like, then discard the rest. Peel the skins off the potatoes if you like, then cut them in half or into quarters and toss with the dressing and onions.

  • Place potatoes in large pot and cover with cold water by 2 inches. Heat to boiling over high heat; stir in 2 teaspoons salt. Reduce heat to medium-high and cook 18 to 24 minutes or until potatoes are tender. Cooking time will vary based on size of potatoes; using slotted spoon, remove smaller potatoes from pot as they finish cooking and transfer to cutting board. Let cool slightly; then chop potatoes into 1-inch pieces and place in large bowl. Do not pour water out of pot.
  • When all potatoes are cooked and removed from pot, add green beans to boiling water. Cook 2 minutes or until beans are tender-crisp; use slotted spoon to transfer beans to bowl with potatoes.
  • Meanwhile, place bacon in cold medium skillet. Place over medium-high heat; cook 10 to 12 minutes or until bacon is crispy, stirring occasionally. Using slotted spoon, transfer bacon to bowl with potatoes. Reserve 3 tablespoons bacon drippings in skillet (pour off any excess).
  • Reduce heat to medium-low; add shallots to bacon drippings. Cook 1 minute or until shallots are tender, stirring constantly. Remove from heat; stir in mustard and vinegar. Transfer mixture to bowl with potatoes.
