1/2 pound Brussel sprouts, butt-end removed, halved
2 teaspoons olive oil
1 cup Red onion, sliced into thin strips
1/2 teaspoon Garlic, minced
3 Tablespoons Chicken or vegetable broth
1 Tablespoon white wine vinegar
2 cups Great Northern white beans, cooked
2/3 cup California Ripe Olives, halved
2 teaspoons Sage, chopped
1 1/2 teaspoons Lemon zest, chopped
1/2 teaspoon Salt
pinch Black pepper, ground

Steps:

  • 1 Bring water to a boil in a large saucepot. Add brussel sprouts and cook for 3-5 minutes until bright green and just tender.2 Drain well.   • Cook a 12-ounce bag cut green beans as the label directs. Whisk 3 tablespoons olive oil, 2 tablespoons lemon juice, 1 tablespoon grainy mustard, 1 minced garlic clove and 1/2 teaspoon each salt and pepper in a bowl. Cook 1 chopped red onion in olive oil in a skillet over medium-high heat, 2 minutes. Add one 15-ounce can drained cannellini beans, one 10-ounce bag thawed frozen edamame and the green beans; heat through. Toss with the dressing, sprinkle with parsley.

I got this recipe when I was at a crafts fair in Scotland. There was a cooking demonstration in the old fish market hall by the harbour, you could taste the food and get the recipe. I love having tuna salad during the summer months, when it's to warm to cook and all you want is a light meal. If you don't want to make your own dressing it's also nice with French Dressing.

1 lb tuna steak, skinned and cubed,can be fresh or defrosted
1 tablespoon olive oil
1 clove garlic, crushed
1 red onion, thinly sliced
1 (14 ounce) can red kidney beans, washed and drained
2 tomatoes, chopped
1/2 cucumber, chopped
2 tablespoons olive oil
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh basil
2 teaspoons vinegar
salt, to taste
pepper, to taste
green salad leaves, to garnish

Steps:

  • Heat oil in a pan.
  • Add garlic, onion and tuna, cover and cook for 5-7 minutes on a low to medium heat.
  • Spoon mix into a large dish and add the beans, cucumber and tomatoes.
  • For the dressing, put all dressing ingredients in a dressing shaker (you can use a jar with a screw top lid) and shake until everything is mixed well.
  • Pour the dressing over the tuna salad.
  • Arrange the tuna salad on a bed of green salad leaves of your choice to serve.

My hubby, who hates beans, demanded I get the recipe. We first devoured it at Betty and Jim's 60th wedding anniversary! Perfect for potlucks.

¼ pound bacon
1 pound ground beef
1 onion, diced
1 (15 ounce) can pork and beans, drained
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can butter beans, drained
½ cup ketchup
½ cup brown sugar
2 tablespoons white vinegar
1 tablespoon yellow mustard

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble when cooled. Wipe out skillet with a paper towel.
  • Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add onion and cook until clear, about 5 minutes more.
  • Combine cooked bacon, cooked beef, pork and beans, kidney beans, butter beans, ketchup, brown sugar, vinegar, and mustard in a slow cooker. Stir to combine. Cook on High until heated through, about 1 hour.

1 ounce thick-sliced lean bacon or 1 ounce thick-sliced pancetta, cut into 1/4" dice
3 medium onions, halved and thinly sliced lengthwise
2 bay leaves
1/3 cup balsamic vinegar
2 tablespoons water (or reserved bean cooking liquid)
3 cups drained and cooked beans or 3 cups drained and cooked lentils, or canned beans rinsed well and drained
kosher salt
freshly ground black pepper
1/4 cup fresh flat-leaf parsley

Steps:

  • To make the dressing, put the bacon in a medium heavy nonstick skillet set over moderately low heat, cover and cook until it's crisp and browned and has rendered it's fat out, about 8 minutes Add the onions, cover and cook until they are wilted, about 5 minutes adding 1 Tbls of water if necessary to prevent sticking Remove the lid and continue cooking until the onions are golden brown, about 8 minutes Add the bay leaves, balsamic vinegar and water, simmer for 30 seconds.
  • Stir in the beans and salt to taste.
  • Simmer 5-10 minutes, tossing occasionally, until the beans are heated through Pepper generously and stir in the parsley.
  • Serve warm.

8 bacon strips, diced
2/3 cup sugar
2 tablespoons cornstarch
1-1/2 teaspoons salt
Pinch pepper
3/4 cup white vinegar
1/2 cup water
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/4 ounces) lima beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (14-1/2 ounces) cut green beans, drained
1 can (14-1/2 ounces) cut wax beans, drained

Steps:

  • In a skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 1/4 cup drippings. Add sugar, cornstarch, salt and pepper to drippings. Stir in vinegar and water; bring to a boil, stirring constantly. Cook and stir for 2 minutes., Add the beans; reduce heat. Cover and simmer for 15 minutes or until beans are heated through. , Place in a serving bowl; top with bacon.

1/2 small red onion, diced
2 medium carrots, halved lengthwise and thinly sliced
1 medium red bell pepper, ribs and seeds removed, diced
1 clove garlic, slivered
1 can (19 ounces) cannellini beans, drained and rinsed
1 teaspoon grated lemon zest
Coarse salt and ground pepper
2 teaspoons fresh lemon juice

Steps:

  • In a small saucepan, heat oil over medium heat. Add onion and carrots; cook, stirring frequently, until onion is lightly browned, about 5 minutes. Add bell pepper and garlic; cook, stirring, until pepper is crisp-tender, about 3 minutes.
  • Stir in beans, lemon zest, and 1 cup water, and season with salt and pepper; bring to a boil. Reduce to a simmer; cover, and cook until beans have absorbed most of the liquid, about 10 minutes. Stir in lemon juice; season again with salt and pepper.
