KANSAS CITY-STYLE BBQ SAUCE

2 tablespoons neutral-tasting oil, such as grapeseed or vegetable
6 cloves garlic, smashed
2 tablespoons tomato paste
1 slightly heaping tablespoon chili powder
1 tablespoon paprika
1 teaspoon crushed red pepper
1/4 teaspoon ground allspice
Pinch ground cloves
2 cups ketchup
2 cups water
1/2 cup cider vinegar
1/4 cup dark molasses
1/4 cup firmly packed dark brown sugar
1 tablespoon kosher salt
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 teaspoons English-style dried mustard
1 teaspoon freshly ground black pepper
1 bay leaf

Steps:

  • Heat the oil in a medium saucepan over medium heat. Stir in the garlic, tomato paste, chili powder, paprika, red pepper, allspice, and cloves and cook, stirring, until paste is dark brick red, about 3 minutes. Add the ketchup, water, vinegar, molasses, brown sugar, salt, soy sauce, Worcestershire, mustard, black pepper, and bay leaf. Adjust the heat to maintain a gentle simmer and cook until the flavors come together, about 30 minutes. Remove and discard bay leaf before using.

1/2 teaspoon finely grated lemon zest

Steps:

  • 1 Heat the oil in a medium saucepan over medium heat
  • 2 Add the garlic and cook, stirring, until lightly browned
  • 3 Stir in the ketchup, water, vinegar, brown sugar, paprika, chili powder, cayenne pepper and lemon zest
  • 4 Reduce the heat to medium-low; cook for 15 minutes, stirring occasionally
  • 5 The sauce is ready to use, or it can be cooled and refrigerated for 7 to 10 days

½ cup brown sugar
¼ cup white sugar
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice
½ tablespoon salt
1 teaspoon finely ground black pepper
1 teaspoon finely ground red pepper
¾ teaspoon hot pepper sauce
1 cup ketchup (such as Heinz®)

Steps:

  • Stir vinegar, brown sugar, white sugar, Worcestershire sauce, lemon juice, salt, black pepper, red pepper, and hot pepper sauce together in a saucepan; bring to a boil, place a cover on the saucepan, reduce heat to medium-low. Cook sauce at a simmer, stirring occasionally, until sugars dissolve completely and sauce is thick, about 15 minutes.
  • Stir ketchup into the sauce until smooth.

I'm not sure if using honey instead of sugar really qualifies as a 'West Coast twist,' but it does ensure that people from North Carolina can't attack me for this Eastern North Carolina-style barbecue sauce not being authentic. Anyway, while this isn't exactly what you might find in the Tar Heel State, it was fantastic on pulled pork.

This barbecue sauce is good on just about anything you put it on from chicken to steak to French fries! Sauce must be kept refrigerated.

5 cloves garlic, minced, or more to taste
1 cup ketchup
1 cup Worcestershire sauce
1 cup brewed coffee
½ cup cider vinegar
½ cup brown sugar
¼ cup minced hot chile peppers
3 tablespoons chili powder
2 teaspoons salt

Steps:

  • Combine onion, garlic, ketchup, Worcestershire, coffee, vinegar, brown sugar, chile peppers, chili powder, and salt in a large saucepan and heat over medium-high heat until simmering. Reduce heat and simmer for 25 minutes.
  • Puree in a food processor or blender until smooth.

12 ounces chili sauce
1/3 cup Dijon mustard
1 tablespoon dry mustard
1 1/2 cups dark brown sugar

1 1/2 cups red wine vinegar
1 cup fresh lemon juice
1/2 cup steak sauce
1/4 teaspoon Tabasco sauce
1/4 cup Worcestershire sauce
1 tablespoon soy sauce
2 tablespoons canola oil
1 (12 ounce) can beer
3 garlic cloves (crushed, not sliced)

Steps:

  • Bring all ingredients except garlic in sauce pan and heat to a light boil.
  • Remove from heat and cool.
  • Add garlic and stir well.
  • Pour into pint jars to store.
  • Can be kept for several weeks in the fridge, for longer storage, freeze in freezer.

This BBQ sauce is very common and well liked in the Madawaska County of Northern Maine US and New Brunswick Canada. It is most commonly used as a side dipping sauce for chicken, but is also used as a dressing for coleslaw instead of the typical creamy or vinegar ones we are used to seeing.

1 (284 ml) can condensed tomato soup

1/2 teaspoon salt

Steps:

  • Combine all the ingredients in a small pot on low heat.
  • Stir until the mixture is well blended and it is nice and hot. Do not let boil, the sauce will not stay blended properly, or that's what my grandmother told us. :-)
  • Once the sauce is hot remove from heat and let cool. Pour into a container and refrigerate. Enjoy with your next chicken dinner.
