Watercress and Pork Soup image

This Chinese watercress and pork ribs soup is packed with nutrition. The delicious soup is super easy to prepare and you will only need 4 ingredients.

500 gram (1 lb.) pork spare ribs, cut into bite size pieces
12-15 dried jujube fruits/red dates (Chinese: hong zao)
2 teaspoon salt
6 cup (1.5 liter) water
250 gram watercress (Chinese: xi yang cai / Indonesian: selada air), remove ends and roughly chopped
1 tablespoon goji berries (Chinese: gou qi)

Steps:

  • (Optional) Blanch pork spare ribs in a pot of boiling water to ensure a final clear soup.
  • Boil together blanched pork spare ribs with red dates, salt, and water, the reduce the heat to a simmer and cook until the pork is tender. About 1 hour
  • Add watercress into the pot bring it to a boil again. Reduce heat and simmer until the the watercress is tender. About 20-30 minutes.
  • Add goji berries and cook for another 5 minutes.

1 bunch of watercress - ends trimmed and washed
300 g pork ribs
6-8 dried red dates
1 carrot - peeled and cut into large pieces
6-8 dried oysters
3 tbsp of goji berries
2 honey dates
20 g ikan bilis (dried anchovies) - rinsed
6 cups water
Salt - to taste

Steps:

  • Blanch the pork ribs in a pot of boiling water for about 5 minutes to remove surface scum. This process makes for a clearer soup. Remove, rinse and set aside.
  • Transfer all the ingredients into a soup pot and bring to a boil. Once it is boiling, turn to the lowest heat and simmer for about 1.5 to 2 hours or until pork ribs are soft.
  • Season with salt to taste.

The easiest way to cook this soup with some pork ribs, salt and watercress but here we recommend some additional items such as wolfberries and dates to give it a sweeter flavor. Best served warm with a bowl of rice and some dark soy sauce for dipping!

1 bunch watercress 200 g
250 g pork ribs
2.5 L water
10 g wolfberries
2 red dates (pitted)
3 tsp sweet apricot kernels (aka Chinese South almonds)
3 tsp bitter apricot kernels (aka Chinese North almonds)
2 ginger slices
salt (to taste)

Steps:

  • Clean and prepare watercress. Pluck away unwanted parts of the watercress and cut away the tail end. Wash and soak for 10mins. Drain and set aside.
  • Blanch pork ribs. Bring a pot of water to boil, blanch the pork ribs in boiling water with a few pieces of ginger before using.
  • Boil soup. In a soup pot, bring 2.5L of water to boil and add both types of apricot kernels, red dates, and pork ribs. Bring to boil. Then turn to lowest heat. Allow the soup to simmer for at least 1.5 -2 hrs. Add watercress and wolfberries and simmer for another 20 minutes

  • With the watercress still in a bundle, cut off the stems where the leaves begin, about 5 to 6 cm from the end, but do not discard. Wash leaves and stems separately, in several changes of water.
  • Meanwhile, fill a small pot with water and bring to a boil. Put in pork ribs and blanch for a minute or so to remove impurities. Discard the water and wash the meat clear of all scum and grit. Set aside.
  • Put pork ribs, scallops (including soaking liquid), honey dates, red dates, sweet and bitter almonds, into a slow cooker. Pour in water or stock until just enough to immerse all the ingredients. Set slow cooker on Auto setting. When soup has come to a simmer, add in the watercress stems and slow cook for another two hours. (Note: If cooking in a pot over the stove top, please read Recipe Notes below).
