1 medium seedless watermelon
⅛ cup sugar, or more to taste

Steps:

  • Cut watermelon into small pieces and place in a blender. Add 1 cup water and 1/8 cup sugar; puree until smooth. Pour into a pitcher.
  • Add remaining 2 cups water. Sweeten with additional sugar, to taste.

4 cups cubed seeded watermelon
½ cup water
½ cup white sugar, or to taste
4 slices lime
24 fresh mint leaves
ice

Steps:

  • Puree the watermelon and water in a blender until smooth. Add sugar to taste. Cut the lime slices in half. Place a half lime slice into each of 8 glasses along with 3 mint leaves. Crush with a cocktail muddler, then fill each glass with ice. Pour in the watermelon agua fresca, and stir before serving.

3 cups peeled, seeded watermelon, diced
1/2 cup sugar, or as needed
Lime wedges, for garnish

Steps:

  • Puree the diced watermelon with 4 cups cold water in blender. Blend until smooth, and then pour into a pitcher - any ground seeds should remain in the bottom. Add 6 cups cold water and sweeten with sugar, as needed. Garnish with lime wedges.

1/2 cup sugar
6 cups 1-inch dice watermelon
Zest and juice of 2 limes
Lime wheels, for garnish

Steps:

  • Add the sugar and 1/2 cup water to a small saucepan. Stir and bring to a simmer over medium heat until the sugar is melted, then turn off the heat and let cool.
  • Add the watermelon, lime zest and juice and 3 tablespoons of the cooled simple syrup to a blender. Blend until smooth. Pour into 4 small glasses.
  • Garnish each with a wheel of lime.

This agua fresca can be used as a template for any soft fruit: cantaloupe, mango, papaya, pineapple, strawberry, guava... the list goes on and on. Start by mashing the fruit and add water to make 1 gallon. Don't be tempted to throw this in the blender, as the best aguas always have bits of fruit floating throughout. You should make it a little stronger than you think since chilling dulls the flavor and ice will dilute it. Extra agua can be frozen into paletas. Please adjust the sugar to you liking. 1 watermelon (medium)
1 lime, juice of
ice

Steps:

  • Combine the water and sugar to taste in a saucepan and boil until the sugar dissolves. Cool.
  • Peel the watermelon, remove as many seeds as possible, and mash with a potato masher (or pulse in a food processor) until the fruit is fairly smooth. Add the water and lime juice. Taste and adjust with more sugar, lime, or water as desired. Serve over ice.
