VODKA WATERMELON AND BASIL GRANITA - HEAT WAVE TREATS
It's cold. It's refreshing. And there's vodka in it. This vodka watermelon and basil granita is easy and the perfect remedy for heat wave temperatures.

Steps:
- Combine everything together and blitz in the blender until smooth.
- Pour into one or two flat containers with a lid. Freeze for 1½-2 hours. Place your serving glasses in the freezer also.
- Scrape the granita with a fork to make nice ice crystals. Put back in the freezer and repeat after 30 minutes.
- Serve the granita in cold glasses with a fresh leaf of basil on top. It's really nice to eat this with fresh cut watermelon on the side. Enjoy!

- Put the watermelon and raspberries in a food processor and whizz to a purée, or liquidise in a blender until smooth. Use the back of a spoon to push the fruit purée through a fine sieve into a bowl. Discard any solids left in the sieve.
- Mix the vodka, sugar, lemon and lime juice until the sugar has dissolved, then add to the watermelon/raspberry mixture. Pour into 2 or more plastic, lidded containers that fit easily in your freezer and freeze for 2-3 hours. You don't want the depth of the liquid to be more than 2-3 cm. Break up the crystals with a fork (you need to do this before the mix freezes too hard). Freeze until ready to eat. Serve in bowls, topped with small mint and basil leaves.

- Roughly chop the watermelon, put it into a blender or food processor with the vodka and whizz until smooth (see tips). Strain into a deep tray, then freeze for 1 hour. Drag a fork through the granita to break up the ice crystals, then freeze for 45 minutes more. Drag the fork through again. Repeat after another 45 minutes or so until the ice has a rough, grainy texture.
- Meanwhile make the syrup. Dissolve the sugar in 80ml water in a pan on a low heat, stirring occasionally, until clear. Boil the syrup briskly, adding the zest and juice of the limes and grated ginger. Cook for about 5 minutes until just syrupy, then cool but don't put in the fridge. To serve, scoop the granita into glasses, drizzle over the syrup and scatter with the chopped mint.

WATERMELON GRANITA
The granita is a cross between sorbet and Italian ice, and there's a cool trick to get the right icy texture. My version is made with watermelon and a little vodka for a perfect adults-only frozen treat.

Steps:
- Slice, peel, and cube 6 cups of watermelon. Combine coarsely chopped watermelon, sugar, and lime juice in a bowl and let stand until macerated and juicy, 25 minutes.
- Process in a blender until just smooth, then pass through a China cap using the back of a ladle. Transfer to a shallow metal tray and remove the foam on top. Freeze, stirring and scraping occasionally with a fork until crystals form and granita is frozen (2-4 hours). Every 20-30 minutes, scrape a fork through the mixture to create the crystals.
- To serve, divide finely diced watermelon among chilled serving glasses and top with granita. Drizzle with vodka (optional) and serve immediately.
WATERMELON GRANITA
Steps:
- Combine all ingredients in a food processor. Puree until smooth. Pour into a shallow, wide pan and freeze for 1 hour. Rake mixture with fork and freeze for another hour. Rake and freeze for one more hour. Rake and serve in cups.

WATERMELON GRANITA
Steps:
- Place watermelon chunks in blender and blend briefly to coarse puree. Measure sieved puree; it should have yielded 3 cups.
- Combine sugar and water in a medium saucepan and bring to a boil. Lower heat and simmer 1 minute. Let cool completely and combine with watermelon puree and lemon juice. Pour mixture in 8x12 metal pan and place in refrigerator. When completely chilled, cover pan, move to freezer and freeze 30 minutes. Stir mixture with fork, scraping down sides well to loosen ice crystals that have formed. Freeze another 30 minutes and repeat scraping and stirring. Repeat several times, or for a total of 23 hours, until mixture ice evenly icy and crystalled throughout. Serve within 68 hours.
LEMON VODKA GRANITA
Steps:
- Combine the lemon zest and juice, syrup and vodka and transfer to a metal 13 x 9-inch baking pan. Freeze for 4 hours.
- Remove baking pan from freezer and scrape surface with a spatula or fork to create large crystals. Transfer crystals to wine goblets and garnish with fresh berries and toasted almonds.
- Bring water and sugar to a boil and boil until sugar is dissolved. Cool to room temperature and transfer to a jar. Store in a cool pantry or refrigerate.
WATERMELON GRANITA
A few lazy stirs as this granita sets up in the freezer is really the only tricky thing about this easy and refreshing dessert. It's also a perfect midafternoon cooler for a vacation house full of children.

- Cut about 1 pound watermelon into small chunks (discarding the rind), and freeze them. When they're frozen, put them in a blender with 2 tablespoons sugar and 2 tablespoons lemon juice, and blend until the mixture liquefies. Pour the mixture into a shallow glass or ceramic pan, and freeze for about 2 hours, breaking up the ice crystals with a fork every 30 minutes or so. It should be slushy and crunchy.
