8 oz watermelon juice
2 oz white rum such as Don Q
1 oz fresh squeezed lime juice
1 TBSP of agave nectar

Steps:

Puree chunks of seedless watermelon in a blender. You may have to add a little bit of water to get the puree started. Then strain the juice through a fine mesh strainer. Keep in the fridge until ready to use.
Combine watermelon juice, rum, lime and agave nectar in a mixing glass. Stir well. Add ice to two rocks glasses and then fill with the juice mixture. Stir again and then garnish with a tiny slice of watermelon and a lime. Makes two drinks. When I make it by the pitcher, I use 8 cups of watermelon juice, 2 cups of rum, 1/2 cup of lime juice and a quarter cup of agave nectar. Makes two drinks.

Steps:

Crush shiso in the bottom of a large pitcher, using a long wooden spoon. Add watermelon juice and rum; stir. Serve over ice; garnish with shiso sprigs.

Fill a glass with ice and add remaining 1 ounce rum. Add sparkling water, rum-infused watermelon, and any leftover soaking juices.

Steps:

Put a handful of ice in a blender suitable for crushing ice, along with the rum, watermelon liqueur, lime juice and watermelon flesh. Blitz until just smooth.
Fill a hurricane or other tall glass with ice, pour over the daiquiri and garnish with a wedge of watermelon.

50 fresh mint leaves
5 limes, juiced
1 cup white rum
⅔ cup simple syrup
2 cups ice cubes, or as needed
1 cup club soda, or as needed

Steps:

Place cubed watermelon in a blender and blend until smooth. Pour into a bowl through a mesh strainer to remove pulp. Measure out 2 cups of strained watermelon juice and set aside.
Place mint leaves in the bottom of a pitcher. Pour in 1/2 the watermelon juice; muddle mint leaves with a muddler or the bottom of a wooden spoon.
Pour remaining watermelon juice, lime juice, rum, and simple syrup into the pitcher. Fill with ice and top with club soda. Serve.
