1 lb. chicken tenderloins ( about 8 pieces boneless, skinless)
1 cup AP flour (all purpose flour, for breading the chicken )
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon dried mustard
1 teaspoon paprika
1 teaspoon garlic powder
2 large eggs (whisked )
1 cup vegetable oil (for frying, you can also use an air fryer if you prefer)
¼ cup butter (salted, 4 tablespoons )
¾ cup hot sauce (I used Frank's red hot)
¼ teaspoon garlic powder
¼ teaspoon salt
⅛ teaspoon pepper
4 sandwich buns (King's Hawaiian or St. Pierre Burger Buns)
¼ cup butter (used to butter the buns, about 1 tablespoon per bun)
4 pieces iceberg lettuce (washed and dried )
1 large heirloom tomato ( sliced thick)
½ cup pickles (bread and butter chips or spicy chips work best)
¼ cup mayonnaise (about 1 tablespoon per sandwich)

Steps:

Preheat the oven to 400 degrees.
Grab a baking tray and set it aside.

4 chicken breasts, cutlets
1/2 cup pickled jalapeno juice
1 cup buttermilk
4 dashes hot sauce
1 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon granulated onion
1 teaspoon granulated garlic
1 teaspoon chili powder
4 -6 cups canola oil or 4 -6 cups vegetable oil
4 potato buns
1 tablespoon butter
4 tablespoons mayonnaise
4 green leaf lettuce leaves
4 slices tomatoes

Steps:

In a large bowl, combine the chicken, jalapeño juice, buttermilk and hot sauce. Cover with plastic wrap and chill for at least 1 hour, more if you have the time.
In a shallow bowl, whisk together the flour, salt, pepper, onion, garlic, and chili powder.
To dredge the chicken, remove each piece from the buttermilk mixture and dip into the seasoned flour. Dip once again into the buttermilk and once more into the dry ingredients. Place the dredged chicken on a wire rack set over a baking sheet and continue coating the remaining chicken pieces. Allow the coated chicken to rest while you heat up the oil. This will prevent the coating from falling off during frying.
Pour the oil into a large pot and heat up to 365 degrees F. Carefully lower the chicken into the hot oil, cooking it in batches to not overcrowd the pan. Fry until golden brown and the chicken reaches 165 degrees, about 4 to 6 minutes. Using a slotted spoon, remove the chicken from the oven and place on a clean wire rack, set over a baking sheet.
Set a large pan or griddle over medium high heat, melt the butter and toast the buns, cut side down.
To assemble the sandwiches, spread the buns with mayonnaise and place a chicken on each bottom bun. Top with lettuce and tomato and the top bun. Serve immediately.

1 lb ground sirloin
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup mayonnaise
1/2 cup ketchup
8 slices American cheese
4 brioche hamburger buns
4 pieces green lettuce leaves
2 large tomatoes, sliced
1 small white onion, sliced
1/3 cup sliced pickle

Steps:

In a large bowl, combine the ground sirloin, salt, pepper, garlic and onion powder until evenly combined. Divide the mixture into 4 equal parts and then shape each into thin square patties. Place on a baking sheet lined with parchment paper and freeze for 30 minutes.
Heat a large griddle or cast iron skillet over medium-high heat. Once hot, place the frozen meat patties on the pan. You might have to cook them in batches. Press down with a spatula and cook for about 4 minutes on the first side. Flip over and cook for another 2 to 3 minutes on the second side. Turn off the pan and place a slice of cheese on top of each patty and allow to melt.
Toast the buns and place the remaining cheese slices on top of the bottom buns. To assemble the burgers, place a burger patty on top, lettuce, tomato, onion, and pickles. Spread the top buns with mayo and ketchup and place on top of the burgers. Serve immediately.
