Weeki Wachee Roll Up Recipes
WEEKI WACHEE ROLL UP
This came from a children's cookbook called "Mermaid Cookbook" by Barbara Beery. It was very yummy and decided to put it here so I can reference it easily. It is on pages 32 and 33 of the Mermaid Cookbook.

Steps:
- In a small bowl, combine cream cheese and chives. using a small spatula, spread the cream cheese mixture evenly over each tortilla within about 1 inch of the edge.
- Spread a thin layer of hummus over the cream cheese. Layer carrots, sprouts, tomatoes, and lettuce and then sprinkle with cheese. Carefully roll up each tortilla.
- Wrap each tortilla roll tightly in plastic wrap and chill for at least 30 minutes or until ready to serve.
- To service slice each roll into 3 pieces.

These rollups are always a HUGE hit with the kids as well as the adults. A creamy, cheesy salsa mixture provides the filling. They are easy to make and may be prepared in advance.

- In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
- To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.
