2 tsp Smoked paprika
1 tsp Ground allspice
1 tsp Dried oregano
500 g Skinless chicken breast (4 x 125g)
1 tbs Olive oil
750 g Potato(es) halved and quartered
2 medium Red onion cut into thin wedges
2 medium Red capsicum coarsely chopped
4 clove(s) Garlic
0.333 cup(s) Fresh flat-leaf parsley
1 x 3 second spray(s) Oil spray

Steps:

  • Combine paprika, allspice and oregano in a large container with a lid. Add chicken and 2 teaspoons of the oil. Season with salt and pepper. Close container lid and shake to coat chicken. Marinate in fridge for 30 minutes.
  • Preheat oven to 200°C. Place potatoes, onions, capsicums and whole garlic cloves in a large baking dish. Drizzle over remaining oil and season with salt and pepper. Toss to combine. Bake for 20 minutes.
  • Meanwhile, lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook chicken for 2-3 minutes each side or until golden. Transfer chicken to tray with vegetables. Bake for a further 15 minutes or until chicken and potatoes are cooked through. Serve sprinkled with parsley.

  • To make marinade, combine coconut milk, cilantro, jerk seasoning, sugar, garlic, salt, ginger, lime juice and cayenne in a blender or food processor; process until combined and set aside.
  • Layer chicken, potatoes, pineapple and onion in a slow cooker. Pour marinade over top; cover and cook on low until chicken is cooked through and potatoes are tender, about 5 hours. Season to taste with salt and pepper and serve

Steps:

  • Combine onion, scallion lengths, habanero, garlic, ginger, lime juice, oil, soy sauce, molasses, jerk seasoning, and allspice in blender; process until mixture forms a paste. Transfer 1/4 cup of paste to cup; cover and refrigerate.
  • Combine chicken and remaining seasoning paste in large zip-close plastic bag. Squeeze out air and seal bag; massage paste onto chicken. Refrigerate 8 hours or up to overnight.
  • Transfer chicken and seasoning paste to 5- or 6-quart slow cooker. Cover and cook until chicken is tender, 4-5 hours on Low.
  • Preheat broiler. Line rimmed baking sheet with foil and spray with nonstick spray.
  • With tongs, transfer chicken to prepared baking sheet. Brush top of chicken with reserved 1/4 cup seasoning paste. Spray chicken with nonstick spray. Broil until golden in spots, about 3 minutes. Sprinkle with sliced scallion and serve with lime wedges.
  • Per serving: 1 thigh

1 medium garlic clove, minced
1 medium onion, chopped
14 1/2 ounces fire-roasted diced tomatoes with green chilies, undrained
15 ounces canned black beans, drained and rinsed
2 cups canned chicken broth
1/2 teaspoon table salt
1 tablespoon fresh lime juice
2 tablespoons fresh cilantro, minced

Steps:

  • Combine allspice, cayenne, ginger, garlic salt and 1/4 teaspoon of black pepper in a medium bowl.
  • Add turkey and toss to coat; set aside for 15 minutes.
  • Place turkey in a 5-quart slow cooker; add any spices remaining in bowl. Add garlic, onion, tomatoes, beans, broth, salt and remaining 1/4 teaspoon of pepper; stir.
  • Cover and cook on LOW setting for 6 to 7 hours.
  • Stir in lime juice and cilantro; let sit for 5 minutes for flavors to blend.
  • Yields about 1 1/2 cups per serving.

Steps:

  • In a small bowl add all the spices - cayenne pepper, ginger, garlic, salt, red pepper flakes, and pepper and mix the spices together.
  • Prepare chicken pieces and place them in a large ziploc bag.
  • Add spices to the chicken and shake to coat.
  • Place in refrigerator for 2 hours.
  • Instant Pot instructions: Add the seasoned chicken, garlic, onion, tomatoes, black beans, lime juice, and chicken broth to the Instant Pot.
  • Stir to combine.
  • Place lid on the Instant Pot and close.
  • Close the vent on your Instant Pot to seal.
  • Set Instant Pot to manual for 15 minutes.
  • When pot beeps, allow Instant Pot do a natural release.
  • Stove Top instructions: Place all ingredients in soup pot. Simmer on stove for 30 minutes, stirring occasionally.

Also, my sauce never really thickened, so I might skip the water next time and just use the juice and broth to cook the broccoli. I used the minced ginger in a jar to save time.

1 tablespoon fresh ginger, minced and peeled
1 lb boneless skinless chicken breast, cut crosswise into 1/2-inch strips
2 cups broccoli florets
1/4 cup water
1/2 cup low sodium chicken broth
1/4 cup orange juice
3 tablespoons reduced sodium soy sauce
1 teaspoon cornstarch, dissolved in 1 T water
1 orange, peeled and sectioned

Steps:

  • In a medium nonstick skillet over medium heat, heat the oil.
  • Add the chicken, cook 3 minutes.
  • Add the ginger and cook ginger and chicken 2 more minutes, or til chicken is cooked through.
  • Transfer chicken to a plate and set aside.
  • In the skillet, combine the broccoli and water, stirring to scrape up the browned bits from the bottom of the pan; cook, covered, until tender-crisp, 3-4 minutes.
  • Return the chicken to the skillet; stir in the broth, orange juice, and soy sauce.
  • Add the dissolved cornstarch; cook, stirring frequently, until the mixture boils and thickens slightly.
  • Add the orange; heat through.

1/4 teaspoon nutmeg
16 ounces boneless chicken breasts
1/2 teaspoon cinnamon

Steps:

  • In a small bowl, combine all ingredients except chicken until mixture forms a paste (or in a food processor).
  • Rub chicken evenly with spice mixture; cover and refrigerate at least 8 hours, preferably overnight.
