SHRIMP WITH LEMON, TARRAGON, AND FENNEL

- Cook shrimp 1 minute, or until just cooked through.In a colander drain shrimp and rinse under cold water until cool. Shell, and if desired, devein shrimp.
- In a bowl or plastic container whisk together lemon juice, fennel seeds, red pepper flakes, and salt and pepper to taste and add oil in a stream, whisking. Stir in shrimp, garlic, and sliced lemon and marinate, covered and chilled, stirring occasionally, at least 6 hours or overnight. Stir in chopped tarragon.

- Combine shrimp, garlic, oil, lemon zest, fennel seeds, salt and pepper in a medium bowl.
- Spread the shrimp mixture onto the hot pan. Roast until shrimp are just opaque in the center, 6-7 minutes.
- Sprinkle with basil and serve at once.

- Preheat oven to 220°C (425°F). Line a rimmed baking sheet with aluminium foil; coat foil with cooking spray (or just coat a non-stick rimmed baking sheet with cooking spray).

Curl shrimp tails to heads to form a closed circle with each shrimp; spoon a heaping teaspoon crumb mixture in centre of each. Bake until breadcrumbs are golden and shrimp are cooked through, about 8 to 10 minutes; sprinkle with parsley and serve.
