- Preheat griddle to med heat.
- Mix all ingredients together until well combined.
- Using 1/3 measuring cup, pour out enough batter for 6 pancakes.
- Cook about 2 minutes on each side checking frequently. They can burn easily.
- Makes 6 pancakes. A serving is 3 pancakes.

Because the fruit has its own natural sweetness, there's no need for any sugar in the batter. It's also the best way to use up super-ripe bananas. You can simplify the filling by leaving out the spices, if desired. Then just garnish the pancakes with some fresh blueberries to help tie everything together and create the prettiest presentation.

Steps:
- In a medium bowl, mash 1 1⁄2 bananas; slice remaining banana and set aside for serving. Into bowl with mashed bananas, add eggs, vanilla, baking powder, cinnamon, and nutmeg and whisk until blended.
- Coat a large nonstick skillet with nonstick spray; set over medium heat. Into skillet, spoon 2 tbsp batter per pancake (you may need to do this in 2 batches). Cook until edges are set and bottoms are golden, about 1 minute. Carefully flip pancakes with a thin spatula and cook on other side until bottoms are golden, about 1 minute.
- Serve pancakes topped with reserved sliced bananas and blueberries and dusted with powdered sugar.
- Serving size: 8 pancakes, 1⁄3 cup fruit, and 1 tsp sugar

- Liberally spray your pan and place over medium heat.
- Add your banana to a bowl and use a fork or potato masher to mash your banana until there are no longer chunks.
- Add your egg to your mashed bananas and stir until well combined.
- Pour your batter into a preheated pan and allow it to cook undisturbed for 3-4 minutes until the edges begin to dry. Carefully flip your pancake and allow it to cook for another 2-3 minutes. Transfer your pancake to a plate and top with your favorite toppings. I like peanut butter and maple syrup.

Steps:
- Mix all ingredients until smooth.
- Note: Batter will be kinda thick. If it is too thick for you, add a tablespoon of water at a time until desired consistency.
- Heat a large skillet or griddle that has been sprayed with non-stick butter flavored cooking spray.
- Spoon two good sized heaping tablespoon fulls of the batter into the skillet per pancake and spread out slightly. Let cook like a regular pancake and then flip, allowing to cook another minuet or so. Serve!
