Steps:
- Mix together the ricotta cheese and yogurt in a blender or food processor until smooth.
- Arrange half the cake cubes in the bottom of a medium-size glass bowl.
- Top with 1 cup of the berries.
- Top with 1 1/2 cup of the cheese-yogurt mixture.
- Top with layers of the remaining cake cubes, 3/4 cup berries, and the remaining cheese-yogurt mixture.
- Decorate with the remaining 1/4 cup berries.
- Top each serving with 1 T whipped topping.
- This makes six servings at 5 points each per serving.

- Line the bottom of a 12-cup trifle dish or glass bowl with one-third of the cake slices. Brush the cake with 1⁄3 cup of the apricot preserves. Top with one-third of the fruit mixture (about 2 cups), then one-third of the whipped topping (about 2 cups). Repeat the layering twice more with the remaining ingredients, ending with the whipped topping.
- Cover the trifle with plastic wrap and refrigerate until the cake absorbs the juices, at least 2 hours or up to 8 hours. Sprinkle with the nuts just before serving. Yields 1⁄16 of trifle, about 2⁄3 cup per serving.

- Arrange lady fingers in a trifle dish, or for individual servings, into 6 glasses (1½ fingers per glass). Strain juice from the fruit cocktail into a jug, stir in sherry and pour over lady fingers. Let it soak in.
- Reserve some grapes for decoration. Mix remaining grapes and banana with fruit cocktail. Spoon into the trifle dish or glasses.

- Preheat oven to 400ºF. Coat a 12-cup muffin pan with cooking spray, or fill pan with paper liners.
- Combine flour, oats, 1/4 cup of sugar, baking powder, baking soda and salt in a large bowl; mix well with a fork, make a well in the centre and set aside.
- Whisk together yogurt, milk, egg substitute, margarine and vanilla in a small bowl. Fold mixture into dry ingredients until blended; fold in cranberries. Spoon batter into prepared pan, filling each cup about 2/3 full.
- Bake for 20 minutes; sprinkle tops of muffins with remaining tablespoon of sugar. Bake until a wooden toothpick inserted in centre of a muffin comes out clean, about 5 minutes more. Allow to cool in pan on a wire rack for 10 minutes; remove from pan and cool completely.
