Best Barbecue Ribs Ever image

1/4 cup brown sugar
2 tablespoons chili powder
Kosher salt and freshly ground black pepper
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 racks baby back ribs
1 cup low-sodium chicken broth
2 tablespoons apple cider vinegar
1 cup barbecue sauce

Steps:

  • Combine the brown sugar, chili powder, 1 tablespoon salt, 1 teaspoon black pepper, the oregano, cayenne, garlic powder and onion powder in a small bowl and rub the mixture on both sides of the ribs. Cover and refrigerate 1 hour or overnight.
  • Preheat the oven to 250 degrees F. In a roasting pan, combine the broth and vinegar. Add the ribs to the pan. Cover with foil and tightly seal. Bake 2 hours. Remove the ribs from the pan and place them on a platter. Pour the liquid from the pan into a saucepan and bring to a boil. Lower the heat to a simmer and cook until reduced by half. Add the barbecue sauce.
  • Preheat an outdoor grill to medium high. Put the ribs on the grill and cook about 5 minutes on each side, until browned and slightly charred. Cut the ribs between the bones and toss them in a large bowl with the sauce. Serve hot.

This recipe is easier than it sounds. I usually cook the ribs the day before and grill them for a quick dinner the next night. FYI: the sauce is much better after it is cooked. It is not a dipping sauce.

4 pounds pork spareribs
1 cup brown sugar
¼ cup ketchup
¼ cup soy sauce
¼ cup Worcestershire sauce
¼ cup rum
½ cup chile sauce
2 cloves garlic, crushed
1 teaspoon dry mustard
1 dash ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Cut spareribs into serving size portions, wrap in double thickness of foil, and bake for 1 1/2 hours. Unwrap, and drain drippings. (I usually freeze the drippings to use later in soups.) Place ribs in a large roasting pan.
  • In a bowl, mix together brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, mustard, and pepper. Coat ribs with sauce and marinate at room temperature for 1 hour, or refrigerate overnight.
  • Preheat grill for medium heat. Position grate four inches above heat source.
  • Brush grill grate with oil. Place ribs on grill, and cook for 30 minutes, basting with marinade.

1/2 cup tomato juice
2 tablespoons Italian salad dressing
1 tablespoon dried parsley flakes

Steps:

  • Place the ribs in an ungreased 13-in. x 9-in. baking pan. Cover with foil. Bake at 325° for 1-1/2 hours or until just tender; drain. Combine remaining ingredients; spoon over ribs. , Bake, uncovered, 45 minutes longer, basting occasionally. Cut into serving-size pieces.

5 to 6 pounds spareribs (two 2 1/2- to 3-pound racks)
1/2 cup Peppery Dry Rub, recipe follows
Vegetable oil cooking spray
3 tablespoons chili powder
2 tablespoons freshly ground black pepper
2 tablespoons paprika
2 teaspoons crushed red pepper
1 teaspoon salt
1 clove garlic, minced

Steps:

  • Trim the spareribs, if necessary, and rub both sides of the ribs with the dry rub, working it into the meat. Put the ribs in a shallow glass or ceramic dish, cover, and set aside at room temperature for no longer than 30 minutes, or refrigerate for up to 24 hours. Alternatively, enclose the ribs in a sealable plastic bag and refrigerate.
  • Prepare a charcoal or gas grill, arranging the coals for indirect cooking. Lightly spray the grill rack with vegetable cooking spray. The coals should be hot.
  • Set the ribs, meat side down, over the hottest part of the fire and sear for about 10 minutes until there are defined grill marks on the meat. Transfer the ribs to the cooler part of the grill, cover, and turning the ribs every 15 to 20 minutes, cook for about 1 1/2 hours. If using a charcoal grill, add fresh coals to maintain the heat at medium; if using a gas grill, turn the heat to medium on the burner away from the meat -- turn off the burner under the meat. Cut the ribs between the bones and serve with sauce on the side.
  • Mix the ingredients together in a glass jar or bowl. Cover and shake to mix. Refrigerate until ready to use.

1/2 cup Worcestershire sauce

Steps:

  • Ribs: In Dutch oven, stir together all ingredients, except ribs; add ribs. Cook over high heat until mixture comes to a full boil. Cover; reduce heat to low. Continue cooking, turning ribs occasionally, until ribs are fork-tender, 40-50 minutes. Prepare grill. Barbecue Sauce: In 1-quart saucepan stir together all Barbecue Sauce ingredients. Place ribs on grill. Brush ribs with Barbecue Sauce. Grill, brushing with Sauce and turning occasionally, until ribs are done, 12-15 minutes. Cook remaining Barbecue Sauce over medium heat, stirring occasionally, until it just comes to a boil. Serve with ribs. This is a copy kat recipe from the famous Bar "B" Barn restaurant in Montreal. Simmer the ribs early in the day and then refrigerate until ready to BBQ. This recipe is for pork but beef ribs can be substituted with no problem.

4 lbs baby back ribs
1/4 teaspoon salt and pepper
1/2 teaspoon thyme
1 small bay leaf
1/2 stalk celery, chopped half
1/2 onion, chopped half
1/4 teaspoon salt and pepper
1/4 teaspoon garlic powder
1/4 teaspoon cinnamon
1/4 cup ketchup
1 cup brown sugar
1/2 cup applesauce
3 tablespoons fresh lemon juice

Steps:

  • In a large saucepan or stock pot, cover ribs with cold water; add thyme, salt, pepper, bay leaf, celery and onion.
  • Bring to gentle boil; cover, reduce heat and simmer for about 45 minutes or until ribs are tender.
  • Remove ribs place in shallow glass dish.
  • Set aside.
  • (Strain cooking liquid and refrigerate or freeze to use as soup stock).
  • Sauce.
  • In small saucepan, combine all the sauce ingredients, bring to gentle boil; reduce heat and simmer for 15 minutes to blend flavors.
  • Let cool.
  • Cut strips of ribs into serving portions of 3 to 4 ribs.
  • Pour sauce all over ribs in dish and marinate for 3 to 4 hours in refrigerator or for 30 minutes at room temperature.
  • Remove ribs from sauce, reserving any remaining sauce.
  • Cook ribs on greased grill over medium-hot coals or medium setting, turning and brushing occasionally with reserved sauce, for about 20 minutes or until meat is browned.
  • NOTE:Double the sauce recipe for lots of basting sauce.

1/2 cup catsup
2 tablespoons vinegar

Steps:

  • Cut spareribs into two-rib sections.
  • Combine remaining ingredients and brush outside curve of spareribs with sauce.
  • Arrange in single layer, sauce side down, in a shallow baking pan.
  • Brush top of the ribs with sauce.
  • Cover with aluminum foil and bake at 375F for 45 minutes. Remove foil and poru off any excess fat.
  • Brush with sauce.
  • Continue baking, uncovered about an hour longer, or until ribs are tender, brushing about 4 times with remaining sauce.
