WHIPPED POTATOES
Steps:
- Put the potatoes in a saucepan and add enough water to cover generously. Salt the water, bring to a slow simmer over medium heat, and cook until the potatoes are tender when poked with a fork, 15 to 20 minutes.
- Meanwhile, combine the cream and milk in a small saucepan and bring to a simmer. Keep warm until ready to mix with the potatoes.
- Drain the potatoes, and push them through a ricer into a mixing bowl. Begin whipping the potatoes ¿ either in a stand mixer fitted with the whisk attachment or with a handheld mixer ¿ adding the butter as you go. When the butter has melted, gradually add three-quarters of the hot cream mixture, whipping until the potatoes are soft and fluffy. Add 1/2 teaspoon salt and the pepper, and then any additional cream mixture as needed for the potatoes to achieve the texture of stiffly whipped cream. Serve immediately, or cover and set over a double boiler to keep warm.
AMAZING WHIPPED POTATOES
These potatoes are a perfect complement to ANY meal. I add a bit of room-temperature cream cheese and a tablespoon of sour cream without telling the family. They turn out perfect, fluffy, and very tasty.

- Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until very tender, about 15 minutes. Drain and transfer to a bowl. Mash sweet potatoes and mix in cilantro, chili powder, and salt.
- Place corn in a microwave-safe bowl and microwave on high until warmed, 1 to 2 minutes.

- Heat the oven to 425 degrees and line a sheet pan with parchment paper. Halve sweet potatoes lengthwise, then brush all over with olive oil and sprinkle both sides with salt.
- Place cut side down on prepared sheet and roast for 30 to 40 minutes, or until completely cooked through. Take sweet potatoes out of the oven, turn them over and let cool slightly. Use a fork to rough up the flesh and slightly flatten the potatoes. Season with salt and pepper.

- Preheat oven to 350 degrees. Place potatoes in a large pot, add stock or salted water, cover and bring to a boil. Cook until very soft, 20 to 30 minutes.
- Meanwhile, place garlic on a piece of foil, moisten with oil and loosely wrap it. Place it in oven for 15 minutes.
- When potatoes are soft, drain and return them to the pot to mash by hand or place them in an electric mixer. Add salt to taste, the roasted garlic, the butter, cream and black beans. Beat ingredients together.
- Adjust seasonings, and gently reheat the potatoes before serving. Garnish each portion with cilantro and, if desired, a scattering of corn.

- Peel the potatoes and slice as thinly as possible on a mandoline directly into a large, 8-quart container filled with 4 quarts of cold water. Cover and refrigerate overnight.
- Drain the potatoes and rinse with clean, cold water; spin dry in a salad spinner. Transfer the potatoes to an 11-quart pot, cover with the milk and set over medium heat. Bring to a simmer, about 35 minutes. Reduce the heat in order to maintain a simmer and cook, uncovered, until the potatoes are fork tender and beginning to fall apart, 25 to 30 minutes.
- Reserve 1 cup of the cooking milk. Drain the potatoes thoroughly in a colander and return them to the pot. Press the potatoes through a ricer into a large mixing bowl. Add the reserved hot milk, butter and salt and use an electric hand mixer to whip on low speed for 15 to 30 seconds. Do not overwhip.
BLACK BEAN AND POTATO CAKES
I got this recipe from our local Beans and Grains store. The mild flavor of the cakes goes well with a hot, spicy fresh salsa. A good way to use up left-over mashed potatoes, too.

- In a large bowl, add the mashed potatoes, beans, bell pepper, garlic, chives, and cilantro; stir to combine.
- Add in the eggs and salt and pepper to taste; stir to mix well.
- Form mixture into eight 4-inch patties.
- Put the breadcrumbs into a shallow bowl; dip patties into the crumbs, patting to make the crumbs adhere to the cakes.
- In a large nonstick skillet or griddle, heat 1 tablespoon of oil over medium heat.
- Add as many cakes as will fit in a single layer.
- Brown cakes on one side, then flip to brown on the other side.
- Keep the cakes warm in a 250 degree oven while cooking the rest of the pancakes.
- Serve hot with salsa.

MASHED POTATO-BLACK BEAN ENCHILADAS

- Put a large pot of water to boil, add potatoes and cook until they are soft and easily penetrable by a fork.
- Meanwhile make sauce: in a large saucepan, saute diced onion with a T of oil for 5 min or until soft and translucent. Add extra 2 T of oil and slowly stir in flour. Slowly stir in 1/2 cup salsa and tomato sauce, about 1/4c at a time. Add paprika, cili powder, 1T garlic powder and 1T cumin. Slowly stir in broth and simmer on low until sauce has thickened.
- When the potatoes are done, mash until smooth. Stir in beans, remaining salsa, cumin, garlic and 6oz of cheese.
- When the sauce is done, mix a 1/4-1/2 cup in with the potatos then pour a thin layer on the bottom of a 9x13 pan. Warm up the tortillas in a microwave or the oven (to make them flexible) and ladle about 1/3c of potato mixture in each, spreading it evenly down the middle, and rolling the tortilla tightly around it.
- Line up the enchiladas in the pan and pour the remaining sauce evenly over top. Sprinkle with remaining 2 oz of cheese and bake uncovered for 25min at 350. Enjoy!

- Heat oil in a nonstick skillet over medium heat.
- Add onion and cook until golden, stirring often, about 7 minutes.
- Stir in garlic and cook 1 minute.
- Add beans and mash coarsely with a potato masher, mashing in onion and and garlic at the same time.
- Thin beans with enough water to give them a soft consistency that barely holds it shape in a spoon.
- Season with salt.

POTATO AND BLACK BEAN HASH
Steps:
- Chop whole onion in food processor; squeeze out and discard excess liquid.
- Heat nonstick pan large enough to hold all the ingredients until it is very hot. Reduce heat to medium-high, and add oil.
- Saute onion until it begins to soften.
- Meanwhile, scrub potatoes but do not peel. Julienne in food processor, and add to onion; continue sauteing.
- Julienne whole pepper; squeeze out and discard excess liquid, add to pan with thyme and basil and continue sauteing.
- Wash, stem and julienne mushrooms in food processor; add to pan with tomatoes, and simmer over low heat.
- Rinse and drain beans thoroughly. Add to pan. Simmer until heated through.
- Wash, dry and chop chives.
- Season vegetables with salt and pepper, and serve, topped with crumbled cheese and chives.

This sounds strange, but it's really, really good. I came up with this when I was craving Mexican food and we didn't have may traditional ingredients in the house. It came out great, and it received rave reviews.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish with vegetable oil spray.
- Place potato cubes into a saucepan of lightly salted water. Bring to a boil, then cook for 15 minutes, or until tender. Drain potatoes, and return them to the pan. Pour in olive oil and milk; whip potatoes until smooth using a hand mixer. Once the potatoes are smooth, use a spoon to stir in the pinto beans, onion, and taco seasoning mix.
- Place a small skillet over medium heat, and coat with oil or cooking spray. One at a time, heat tortillas until pliable. Place a heaping spoonful of the potato and bean mixture onto each tortilla, then place a slice of Monterey Jack cheese over the bean mixture. Roll up tortillas and place them seam side down in the prepared baking dish. Spoon enchilada sauce and salsa over the rolled tortillas.
- Bake for 20 minutes, uncovered, in the preheated oven. Remove from the oven, and sprinkle Cheddar cheese over the top. Return to the oven for 10 minutes, or until cheese is melted and bubbly.
