WHITE BEAN CHOCOLATE CHIP COOKIES
White Bean Chocolate Chip Cookies, tasty and easy vegan recipe for flourless chocolate chip cookies made without adding sugar.

- Preheat your oven to 350 and prep a cookie sheet with parchment paper. Also, drain your beans and then rinse them and allow them to drain again.
- In a food processor, blend together the beans, maple syrup, almond butter, vanilla extract, lemon juice and baking powder. Blend these ingredients until combined, stopping a needed to scrape down the sides.
- Next, fold in the chocolate chocolate chips. You may need to transfer the cookie batter to a large mixing bowl to fold in the chips properly.
- Use a scoop or large spoon to scoop the cookies on to the parchment paper, leaving plenty of spread room between cookies. Then press additional chocolate chips into the tops of the cookies as needed.
- Bake the cookies until the edges begin to brown (12-15 minutes). Then allow the cookies to cool on the baking sheet for 15 minutes before transferring them to a rack. Store these cookies in an airtight container in the refrigerator for up to a week.

- Position the rack in the middle of the oven and preheat to 350 degrees F.
- Put the butter in a microwave-safe bowl, cover and microwave on medium power until melted. Alternatively melt the butter in a small saucepan. Brush some butter on the inside of a 9-by-13-inch pan and cool the remaining butter slightly. Whisk the remaining cooled butter, brown sugar, eggs and vanilla in a large bowl until smooth.
- Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a spoon or spatula, taking care not to over mix. The batter should be thick and all of the flour mixture should be fully incorporated. Fold in the chocolate chips.
- Spread the batter evenly in the prepared pan. Bake until the edges are browned and the center is completely set, about 30 minutes. Cool completely, at least one hour, cut into 24 pieces and serve.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Beat butter, brown sugar, and white sugar together in a mixing bowl using an electric mixer until creamy. Add eggs and vanilla extract; continue mixing until well blended.
- Add flour, baking soda, cinnamon, and salt to sugar mixture; mix well. Stir in oats, cranberries, and white chocolate chips. Pour into the prepared baking pan.
- Bake in the preheated oven until a toothpick inserted into the center of the bars comes out clean, 25 to 28 minutes.
- Remove baking pan from the oven and let stand for 30 minutes. Cut into bars.

- Preheat oven to 350 degrees F. Grease 8 X 8 baking pan.
- Measure drained and rinsed beans to make sure you have 1 3/4 cups. You may use canned or home-cooked beans, any white variety.
- Place drained beans and all other ingredients, except chocolate chips and nuts, into food processor ; process just until smooth, but not fluffy.
- Pour batter into prepared baking pan. Sprinkle chocolate chips and nuts over top.
- Bake for 30 minutes, until firm in the center and golden brown all over top. Center should spring back when touched lightly.
- Cool completely before cutting into 12 bars.
- Store in refrigerator.
