WHITE BEANS AND HAM
White Beans flavored with Smoked Ham and the Cajun Trinity slowly simmered and served over white rice. One taste and you'll understand why this is a South Louisiana staple.

Steps:
- Soak beans according to your preferred method
- Cube ham, slice the bacon, chop vegetables and measure the seasonings.
- Fry two slices of bacon starting in a cold Duch oven over medium-high heat.
- Leaving the bacon in the Dutch oven, add the cubed ham and sautee for about 2 minutes, stirring well to coat all the ham with bacon grease.
- Drain the beans and discard the soaking water.
- Add the beans to the Dutch oven with the ham and mix well.
- Add 2 bay leaves and add enough cold water to cover beans (about 5 cups).
- Bring the Dutch oven to a boil, then reduce heat, and simmer for 1 hour, covered.
- While the beans are simmering, add three slices of bacon to a cold cast iron skillet over medium heat.
- When the bacon fat has rendered, add the Trinity to the bacon in the skillet and saute until softened and beginning to brown on the edges, about 10 minutes.
- Add the garlic, Creole seasoning and black pepper (not the salt), stir well and continue to saute for about 2 minutes. Set aside until needed.
- After the beans have simmered for 1 hour, stir well and add the sauteed Trinity and seasonings to the beans.
- Adjust heat to maintain a slow simmer and simmer for 30 minutes, uncovered, stirring occationally.
- After 30 minutes, stir well and cover the Dutch oven. Continue to simmer for another 30 minutes.
- Add 1 teaspoon kosher salt and test the beans for doneness.
- If beans are not done, continue to simmer uncovered for an additional 10 minutes or until tender. Add more water if needed, but only enough to keep the beans just covered.
- Remove the bay leaves and serve over cooked white rice.

- Rinse and sort beans; soak according to package directions., Drain and rinse beans, discarding liquid. Transfer beans to a 6-qt. slow cooker. Add ham hocks. Stir in onion, broth, water and seasonings. Cook, covered, on low 6-8 hours or until beans are tender., Remove meat from bones when cool enough to handle; cut ham into small pieces and return to slow cooker. Serve with a slotted spoon. SOUTHERN-STYLE WHITE BEANS AND HAM
Nothing quite adds a little Southern goodness in your mouth like a big ole pot of slowly simmered Southern-Style White Beans and Ham topped with fresh sliced garden fresh green onions, diced jalapeño peppers, and served with freshly cooked collard greens and a nice warm buttery slice of cornbread.

- Place the dried Northern beans in a colander, rinse the beans off thoroughly sorting through to remove any debris or broken beans at this time.
- Place the Northern beans in a large pot and add enough water to cover as well as come about 2-3 inches above the beans. Place a tight-fitting lid over the pot and let sit overnight or for at least 8 hours before you begin cooking them.
- Drain off the water that the Northern beans have soaked in and placed them back in the pot they have soaked in. Add 6-8 cups of vegetable stock to the Northern beans to cover the beans and come about 2-3 inches above them. If the beans become too thick during the process, add more stock to the pot
- Next, add the chopped Ham steak, diced yellow onions, diced jalapeño peppers, diced celery, and minced garlic to the pot of Northern beans. Place on medium heat and let pot come to a simmer, reduce heat if need be and cook on a low simmer for about 2 hours or 2.5 hours if you prefer a softer bean.
- The last half of an hour is when you will add your seasoning to the pot, at this time add 2 teaspoons of low-sodium Cajun seasoning or regular, kosher salt, and freshly ground pepper. Cook on low for the last 30 minutes.
- Serve over white rice with sliced green onions, sliced jalapeño, and Tabasco sauce if desired.

- Combine ham bone and 4 quarts of water in a large stock pot of Dutch oven at least the night before. Bring to a boil, cover, reduce heat and simmer for 10 to 12 hours.
- In the meantime, place beans in a large pot with water to cover; soak overnight. Drain beans the next day and return to the pot.
- Remove ham bone from the pot and pick off any edible meat. Strain the stock and measure out 3 quarts for the soup. Remaining stock can be frozen.
- Pour 3 quarts of stock over the soaked beans. Add ham, celery, carrots, onion, and garlic. Season with salt and pepper. Bring soup to a boil, then reduce heat to a simmer. Cover, tilting the lid to allow steam to escape, and simmer until beans are tender, 1 1/2 to 2 hours. Add sherry in the last 30 minutes of cooking and season with salt and pepper.
- Ladle soup into bowls and sprinkle with fresh parsley.

HAM HOCK AND BEANS

- In a medium Dutch oven with a lid, over medium heat, add the oil. When the oil is hot, sear the ham hocks in batches, until brown, about 4 to 6 minutes. Remove the ham hock and set aside. Add the onions. Season with pepper. Saute for 2 minutes. Stir in the beans and bay leaves. Season with pepper. Saute for 1 minute. Add the reserved ham hocks and water. Bring to a boil and reduce the heat to medium low and simmer for 2 hours, or until the meat falls of the bone and the beans are creamy. Remove the bay leaves and season with salt and pepper.
HAM AND BEANS
My Mom created this recipe and I really enjoyed it as a child. As an adult, my taste changed just a bit so I modified her recipe to 'kick it up' a bit. It is fabulous even though the ingredients list is quite short! This is a must make with leftover ham and everyone agrees it's absolutely delicious.

- Rinse beans in a large pot; discard shriveled beans and any small stones. Add 8 cups of cold water. Let stand overnight or at least 8 hours. Drain and rinse beans.

WHITE BEAN AND HAM SOUP - RECIPE
I was looking for a recipe to use parmesean cheese rinds and found this recipe. The rind is the outer edges, furthest away from the center, of cheese that has been formed into a disk or wheel of cheese. On some types of cheese, the outside of the cheese is often a wax coating covering the Rind which is the section closest to the outside that begins to harden as the cheese ages. Since the hardened Rind is not considered to be good for eating or grating, it often cut from the cheese and used as a seasoning for foods. The Rind from Parmigiano-Reggiano cheese is very popular as a flavoring to be added to soups, stews, dried beans, soup broth, and canned or fresh vegetables. To save the Rind for future use, wrap it in airtight plastic and freeze. A combination of ingredients makes this soup similar to Italian soups - a very hearty ham and bean soup that goes well with crusty breads and cheese.

- Soak beans overnight in salt water, drain.
- In bottom of stock pot, add oil and sauté onions and garlic over medium heat until softened (about 4 to 5 minutes).
- Remove from heat.
- Add remaining vegetables, seasonings, ham shank, drained beans, parmesan rind, and chicken stock or broth.
- Bring to a boil. Reduce heat to simmer, cover and cook 1 1/2 hours.

- 1. Place the beans in a large pot and cover them with cold water. Cover pot, bring the water to a boil over medium-high heat, then remove from the heat and let sit for 1 hour. Drain and reserve.
- 2. Place the shallots and 3 tablespoons of the butter in a large, heavy-bottomed saucepan over medium heat and cook, stirring, until the butter is melted and the shallots have begun to sizzle. Continue to cook, stirring often, until the shallots begin to turn translucent, about five minutes. Add the pre-cooked beans, stir, then cover with the water. Increase the heat to medium high. When the water boils, reduce the heat again so the water is simmering very gently. Cover, and cook until the beans are soft and some are beginning to fall apart, 1 1/2 hours. Season with salt to taste, and keep warm.
- 3. Heat a cast-iron skillet over medium heat until it is hot but not smoking. Add the ham slices and cook until they are golden on each side, about 4 minutes per side.
- 4. Stir the remaining butter into the beans, adjust the seasoning, and divide them among four plates. Lay a slice of ham next to the beans, and serve, with the peppermill alongside.
