When I mentioned the recipe contest to my husband, he immediately suggested I enter this extra special cake. Packed with ripe bananas and white chocolate in the batter, it tastes wonderful even without the frosting.

1/2 cup shortening
2 cups sugar
2 large eggs
1-1/2 cups mashed ripe bananas (about 3 medium)
3 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
4 ounces white baking chocolate, melted and cooled
CREAM CHEESE FROSTING:
1 package (8 ounces) cream cheese, softened
3/4 cup butter, softened
1 teaspoon vanilla extract
5 cups confectioners' sugar
1/2 cup finely chopped pecans, toasted

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating will after each addition. Beat in bananas and vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Fold in chocolate., Pour into three greased and floured 9-in. round baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing cake from pans to wire racks to cool completely., For frosting, in a large bowl, beat the cream cheese, butter and vanilla until smooth. Gradually beat in confectioners' sugar. Spread between layers and over top and sides of cake. Sprinkle with pecans. Store in refrigerator.

1 cup white sugar
½ cup butter, melted
1 cup mashed bananas
½ teaspoon almond extract
1 ½ cups all-purpose flour
½ cup flaked coconut
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup chopped walnuts
½ cup maraschino cherries, chopped

Steps:

  • Mix together flour, coconut, baking powder, baking soda, salt, chopped walnuts, and cherries.
  • Break eggs in a mixing bowl, and beat until light and frothy. Add sugar and melted butter or margarine. Beat well. Stir in mashed banana and flavoring. Add flour mixture, and stir just to combine. Spoon into greased 9x5x3 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, or until a toothpick inserted in center comes out clean. Let stand for 10 minutes, and remove from pan. Cool.

  • Freeze for 1 to 3 hours, depending on how firm you want your bananas to be.
  • Heat white chocolate chips in microwave at 30 second intervals until liquified.

350 milliliters Coconut milk
150 milliliters Whipped cream (at least 30% fat content)
sugar (to taste)
2 Banana
4 Tbsps Coconut flakes
2 Tbsps cinnamon
4 Dark chocolate

Steps:

  • Chop the chocolate into small pieces and heat in a pan, along with the coconut milk and the cream while stirring continuously. Add sugar to taste. Peel the banana and cut into slices.
  • Mix the banana into the coconut milk and stir in 2 tablespoons of coconut flakes. Spoon everything into 4 glasses and dust with the remaining coconut flakes and cinnamon. Serve garnished with chocolate hearts.

They're a good way to use up brown bananas but because of the coconut and white chocolate they don't taste overwhelmingly of banana. Use the right oats and they're also gluten-free. They're fairly robust, so make a good addition to lunch boxes and they're a perfect energy boost for outdoor activities.

1 tbsp golden syrup
50 g white chocolate ((I use Green & Blacks))
2 bananas
60 g light brown sugar ((I use muscovado))
50 g desiccated coconut
300 g rolled oats ((ensure they're gluten-free if you need a gluten-free bake))
1 tsp sesame seeds ((optional))

Steps:

  • Melt the butter in a pan over a low heat along with the syrup, sugar and white chocolate.
  • Mash the bananas in a large bowl.
  • Pour in the butter mixture and give a good stir.
  • Stir in the the coconut, followed by the oats.
  • Press into a 23 cm (9") square silicone mould or lined tin and sprinkle with sesame seeds if desired.
  • Bake for twenty minutes in the middle of a preheated oven at 180℃ (160℃ fan, 350℉, Gas 4).
  • Leave to cool in the tin then cut into sixteen squares.
